Local Box 12/22/14 - Vegan Greenling Meal Plan Christmas Edition!

Because my delivery day happens to fall on Christmas Day - I got my box a few days early this week! Perfect, just in time for holiday cooking!

just a quick rundown of what I made from last box:

I did try collard wraps, steamed the collards a bit to get them soft then wrapped up hummus and cucumber, it was good but messy
I also sauteed some collard with onion, vinegar and nooch

Roasted potato and turnip & Buttenut -  made a batch and ate it with a few meals, such as mixing it with quinoa, and black lentils.

here is the salad with the vegan ceasar & the ranibow carrots.

Used a couple of the potaoes to make this potato casserole in the slow cooke frm The Vegan Slow Cooker cookbook.  It was kind of like scalloped potatoes!

I found a recipe for a Strawberry Sorrel smoothie and already tried that this morning - it's cute the the website shows a pretty soft pink smoothie because of course with the greens and strawberry mix it was actually kind of murky brown/green.
I used almond milk and no stevia or ice as I don't like stevia nor too cold smoothies.  However still it tasted too light and springy for this chilly blustery second day of witner, so i added some almond butter and cinnamon to kind of ground it and get it more earthy and warm and then it was really perfect!

Tomorrow i will try this Kumquat Apple Ginger Green smoothie!

Avocados could go in a salad but my son today requested an old fave - toast spread with avocado, topped with sea salt and red onion. He declared he wanted it every day now so there goes all the avocado

Beka Santoh - my research shows it's a light asian cabbage, it looks very tasty and fresh and can't wait to try it in a salad with the lettuce and maybe sorrel.

Mustard Greens - I'm trying to just try sauteeing simply most of the hearty greens I get, I used to be more into recipes for greens but find its easiest and actually tastiest to saute with onion or garlic and a bit of vinegar.

Watermelon Radish - I promised a kale salad to Christmas lunch so look at this Kale Detox salad that has watermelon radish and apple....

Broccoli - steamed and plain, my fave

Spinach, probably in that Kumquat smoothie!

Local Box 12/11/14 - Vegan Greenling Meal Plan

Wow - Just look at this green explosion in this weeks box!!




truly amazing, so here is what all that is:

Brussels Sprouts Greens
Collard Greens
Lettuce
Kale
Cilantro

Butternut Squash
Rainbow Carrots with tops
Persimmons
Marrs Oranges
Tangerines
Yukon Potatoes

so apparently Brussel Sprout greens can be cooked like any other green, I i will probably sautee and serve with dash of vinegar and nutritional yeast, my fave way

Collard Greens - i've been seeing lots of recipes for collard wraps, so i think i want to do that, with some kind of peanut dipping sauce.

Lettuce - salads, i just made a really amazing vegan ceasar dressing with soaked cashews, lemon juice, capers ect.. i can't wait to have it on a salad

Turnips & Butternut roasted with some olive oil and salt, maybe these will go in the collard wraps

Persimmons - smoothies, with the oranges or tangerines

Kale - also smoothies, and massaged kale salads, my daughter is addicted to these

Potatoes - maybe mashed, maybe roasted

Vegan Greenling - The Thanksgiving Edition

Oh lordy this is a food extravaganza filled post.
I have still to post from that last box AND because my next box would have fallen on Thanksgiving day, I got it the Monday before, which was perfect because I was able to use the contents for my Thanksgiving meal.

Ok first up let's get the last box out of the way, here are my makings:

Roasted the Kholrabi & the Radish, with olive oil and salt and OMG amazing

Green Onion Hummus - this was so good - here it is served on a whole wheat tortilla with some Trader Joe's frozen falafel


Here are those incredible Orange Cranberry Muffins - i am kind of addicted to them and so is my son



here is a curry simmer with collard greens as one of the many vegetables

So onto Thanksgiving, the box arrived Monday - i was leaving wednesday for Thanksgiving in Marfa, so the timing was ideal!

I took pretty much the entire box with me:

Carrots w/tops
Sorrel
Yukina Spinach
Apples
Sweet Potatoes
Bibb Lettuce
Broccoli Greens
Marrs Oranges

I used the sweet potatoes  AND oranges in Rosemary Citrus Sweet Potatoes from Vegan Holiday Kitchen by Nava Atlas.

I also used the red potatoes from the last box that were still perfect, for Mashed Potatoes

Not from the box i Made a Kale and cranberry salad and fresh cranberry sauce

here is the plate of it all with a bunch of other stuff!



one day i Steamed the broccoli greens and sorrel together, wanting just a huge plate of greens - it tasted ok but wasn't a great idea, the sorrel is much less hardy and so while the broccoli greens were perfect, the sorrel was over cooked.



I don't have a photo but made a delish salad with the bibb lettuce, a carrot, a bell pepper i bought out in Marfa, a cut up raw kolhrabi i had left from the other box and mades some dressing with Just Mayo, lemon juice, mustard and balsamic.

Luckily i was house sitting so had a whole kitchen with which to cook!

Oh and i also made a carrot soup from Happy Herbivore!  super easy and my son even ate it

Local Box 11/13/14 - Vegan Greenling Meal Plan

here's the contents - it was very leafy!



Japanese Turnip
Spanish Black Radish
Rapini
Green Onions
Apples
Red Potatoes
Kohlrabi
Collard Greens
Marrs Oranges
Eureka Persimmons
Cilantro

so, the turnips and radishes had such huge greens, add that to the collards and rapini and it barely all fit in my fridge!

I gave the radish greens to the guinea pig because I love him :)

The Turnip Greens i have already actually used in a Dal dish that I just made from my own brain, i used one turnip too, sauteed the turnip in the spices, cumin, coriander, turmeric and coconut oil, then added the chopped up greens, then added that to some cooked dal, very delish altho not photogenic at all.



Probably will roast the turnips or add to some curry dishes, they look good!  here's a recipe for Roasted Turnips & Balsamic

also may try roasting the Kohlrabi! check this out - Roasted Kohlrabi - i'm just not into cold food right now :)

Radishes - heck, may roast these too, i have done that with the little red ones.

Red Potatoes & Turnip - i found a recipe for Autumn Vegetable Stew in the Thanksgiving Section of my Forks over Knives App - i think i must try that
There will be potatoes left over so i think i will just make some mashed potatoes and gravy for thanksgiving!

Also in that Forks over Knives recipe app i found a Green Onion Hummus so will use the green onions in that

Cilantro will top bean tacos and burritos

Collard Greens - i love these so much - i may make something simple like these Garlicky Collard Greens after all the fancy thanksgiving cooking

and last but not least those oranges!! I am totally craving these Orange Cranberry Muffins so THEY WILL BE MADE

My next box comes early because of Thanksgiving - so hopefully will post before then

Thug Greenling

I'm so loving my new Thug Kitchen cookbook!


First I made these very tasty Black Bean Squash enchiladas - they don't look like the beautyful photo in the cookbook, and they fell apart a little upon serving, but I would totally serve these to people.  I have actually never made enchiladas before so I gotta look into how not to have the tortillas fall apart!

First I made this Roasted Potato Salad - using the box potatoes and subbing cilantro from the box instead of parsley - I would totally take this to a potluck



Here is the persimmon chia pudding - it was OK, i might add dates or maple syrup next time to sweeten it up a bit, i used unsweetened coconut milk



Un-pictured are the peas - i just cooked em up plain to mix with rice or quinoa and greens and i had some leftover of that cashew cheeze that was good with it!

Summer Sqash - I just got the book Thug Kitchen as there is a book signing tonight - and found Sweet Potato Squash & Black Beam Enchiladas, it also has a summer squash soup!

Persimmons - more smoothies with the apples!  however, i am very tempted by this Persimmon Chia Pudding

Potatoes - not sure, maybe roast or sautee up for some tacos, and there's a great Roasted Potato Salad recipe in that Thug Kitchen book

Butternut Sqash - after my delicious roasted squash last week, i'm afraid i have to repeat that.  too good for words

Persimmon Smoothie & more...

I tried to look up some persimmon recipes and frankly just felt lazy about it all - so I revitalized my smoothies from last fall, using the apples too! - just tweaked slightly:

Almond milk, banana, persimmon, apple, almond butter, spinach, cinnamon, cardamom, chia.


Butternut Squash -  I used one of them in this delicious squash curry recipe that I got from Natural Epicurian - basically, squash, sweet potato, tomato, leek, curry spices.  so so so good.



I used the other one just mega roasted, skin on, with coconut oil, salt, pepper, garlic powder and dash of cinnamon.  I think I could eat a whole squash in one sitting.



Black Eyed Peas - yes, i made this very tasty Hoppin' John from the Vegetarian Times cookbook, it has tempeh in it too.



I served it with rice and a dollop of the Dill & Chive Cashew Cheese which i have eaten also just spread on a rice cake and kind of on anything - like the steamed Baby Chard & Collard Mix

Local Box 10/2/14 - Vegan Greenling Mealplan

Joy of joy's - the box is clearly turning"fall"



It says this picture of of last weeks local box but it's essentially what i got minus the limes and plus persimmons!

ok - here goes

Pea Shoots - i already gave some to Drizzle and he likes - but there's a recipe that came with the box (there's always 3 or 4 recipes using some of the contents on the back of the paper that lists the contents!) - that looks easy and tasty - Pea Shoots with Garlic - stir fried with a soy sauce mixture. I found this one online that looks good with ginger - Stir Fried Pea shoots with Garlic and Ginger

Black Eyed Peas - I think I'm going to make a Hoppin' John recipe with Tempeh from my old old faithful cookbook the Vegetarian Times Cookbook - serve with brown rice

Baby Chard & Collard mix - will go in this weeks Kichari - there is a ton so will also probably just steam and serve with balsamic vinegar & nutritional yeast as a side dish

Chinese Long Beans - stir fried with garlic! Or thrown into Kichari

Dill/Chive Mix  - ummmmm Dill & Chive Cashew Cheese - 'nuff said
and if it doesn't use it all then these simple Peas with Dill & Chive

Persimmons - last year I discovered persimmons in a smoothie with fall spices, I'm ready again!

Apples - just eat - likely with almond butter for a snack

Butternut Squash - not sure yet!! I've been so excited to get butternut squash that I'm craving it in a million different ways. sooooo may be some roasted dish, or a curry dish.

Vegan Greenling - Corn Chowder, Squash Blossoms, Goddess Mint...

oh I had fun with this box!

I used the mint in my fave Goddess Mint Dressing from the Blissful Bites cookbook - and look at this great salad with lettuce and microgreens and the dressing







I roasted the little eggplants and made this very tasty tahini eggplant dip from The Health Promoting Cookbook by Alan Goldhamer- i brought it to a party and people ate it all up - i do not know why this picture makes it look blue/green!


Potato Stuffed Squash Blossoms - so sort of a fail in terms of beauty and presentation - but they were really good - i don't know if they are usueally bigger and easier to stuff or what, but it was fun trying!



I used the corn in this Curried Red Lentil Corn Chowder again from Blissful Bites - soo good!

Local Box 9/18/14 - Vegan Greenling Meal Plan

I didn't get a chance to post what I made from the last box so here's a couple of quickies:

Basically i did just use the various vegetables in different Kicharis.  The beans, hon tsai tsai, potatoes, and yellow squash, here is the beginning of one about to cook

Well I've never had squash blossoms before - i know they are often used in Mexico in quesadillas and stuff, but I found this recipe that uses the Potatoes also!  Potato Stuffed Squash Blossoms

Eggplant - this Egglant & Chickpea Curry seems right up me recent Indian Food Alley

I recently put some fresh corn kernals in a Lentil Coconut Curry from my Blissful Bites by Christy Morgan cookbook.  I may make it again because it was AMAZING but she also had a red lentil soup recipe that called for fresh corn kernals, so yeah, that too

I may make this Mint Dal and/or this Coconut Mint Chutney

Local Box 8/4/14 - Vegan Greenling Meal Plan



I hate it when it's almost a week later and just now getting to the post - sorry y'all, i know another box is on it's way.

let's get to it:

i didnt not appear to get the beans that are in the photo - however I love greenling so much I did not complain - stuff happens

Also i got Hon Tsai Tai - which is not pictured. but it's a green that is super healthy and tasty and can be stir fried or put in soups read about it HERE


I'm still on my ayurvedic kick so I am going to incorproate the squash, long beans, hon tsai tai basil and potatoes into my various Kichari dishes - click here to see some Kichari info! but if you google kichari you will find hundreds of recipes with slight variations, endless possibilites

The Jujube Dates are weird, taste like non juicy apples, I may use them in a sweet kichari dish or just eat.

Sunflower Sprouts - what if i snuck them in a kid's sandwhich??? will put on a salad and I know Drizzle will LOVE these :)

Please Peas me

Those Fresh Cream Peas were amazing - I cooked them long enough so they got super soft, I ate them almost every day with rice and some curried vegetables I whipped up - sauteed cauliflower, sweet potato, the amaranth greens, carrots etc in some coconut oil and curry paste, add some coconut milk and simmer.  So good



I did make the Tofu Squash Curry - using the Amaranth Greens and Lime -  super super tasty!




I served up some watermelon with chopped mint which was super refreshing in this heat

Also roasted the potatoes to a nice crisp with olive oil and garlic for my son, i think he at them all in about 5 seconds.

Local Box 8/21/14 - Vegan Greenling Meal Plan

I'm cooking the peas as I type, they are bubbling in a pot with some carrots, celery & onion that I cooked up in some coconut oil till browning.  I will keep you posted on how they are and how I end up eating them!

Bib Lettuce - probably just salads for me and the kids

Yellow Onion - well one of them is already in that pea pot! I can never have enough yellow onions.

Persian Limes - I'm goint to make this Tofu & Sqash Curry - it calles for lime juice! It also calls for chard or kale but I think I will use those Amaranth Greens instead! I looked these up and you can stir fry them too so if there are leftovers I will do that also.

Watermelon & Mint - gonna toss together for a fresh snack.

Mint may also  go in a smoothie or two, or in my fave Salad Dressing Goddess Mint Dressing from
Blissful Bites

Cucamelons - these are so curiouis! they look like mini watermelons but are delicious cucumber things! I ate one all up right away because I cut it open to see what it looked like and to taste, and it was so good I just kept cutting more pieces and poppint them in my mouth

Nanette & the Giant Peach (smoothie)

I wish I had a giant peach - I'm so in love with them.  I fear they are not actually balancing for my ayurvedic dosha but the summer is almost over so I'm going to enjoy their deliciousness while they are here.

For breakfast this morning I had this very delicious and unique tasting Peach Cardamom Smoothie - pictured here with a slice of ayurvedic banana bread I made and almond butter.  I did not use protein powder in the smoothie as I'm am staying away from processed foods as much as possible including the tons of protein powders I currently have in my cupboards.  So I added a half a teaspoon of vanilla. I also miraculously had saffron in my spice cupboard, who am I???





I made another smoothie with cardamom using one of the beautiful limes - Banana Smoothie w/Cardamaom & Lime - super refreshing in this 100 degree weather!

Here is a salad I made with the baby lettuce, microgreens & cucumber - it's topped with the Almond Balsamic Vinaigrette I posted a couple of posts ago - usuing the fresh oregano from the last box.  The almonds and raisins in the dressing are a good grounding balance to the raw greens




The Roasted Beet Quinoa salad is amaze - seriously.  The dressing with the garlic spices and mustard - so OMG.  I used red quinoa so mine didn't "turn pink" like in the recipe.  Also I used a mixture of pumpkin seeds & sunflower seeds instead of walnuts, and maple instead of honey.

Local Box 8/7/14 - Vegan Greenling Mealplan



i think i'm addicted to boxes that arrive at my door with surprise contents. it thrills me like no other

Last month I attended the Telluride Yoga Festival - one of the classes I took was an Ayurvedic class.  If you don't know, Ayurveda is an ancient Indian medical system.  Google it. I've always been fascinated, and I really dug the teacher, Pamela Quinn, her website is Elemental Om - so basically, I'm on an ayurveda kick, and focusing all my cooking and eating on the principals of Ayurveda - read on...

I'm so thrilled to get peaches & figs- my fave summer fruits.
I already at a peach and a fig in my morning granola and coconut yogurt.



I also plan to make this Peach-Cardamom breakfast Smoothie 

Cucumbers - this Cucumber Raita looks very good and cooling for all the curried dishes I plan to make. I will just substitute with coconut yogurt.

Jalapenos - so excited for these beautys - I was making a batch of black beans when the box arrived so one of those babies made it into the final 30 minutes of cooking.

Beets - Roasted Beet Quinoa Salad -looks super good

Lettuce and Microgreens - I will eat a salad or two this week, Ayurveda prinicples generally prefer cooked food, but a salad can be eaten as long as you have some more grounding foods in it, such as beans, nuts, dried fruit, maybe some blanched vegetables.

Eggplant dip & more

Holy moly - this dip was divine - Roasted Eggplant Almond Dip from my old fave Fat Free Vegan. So easy too. I brought this to the pot luck and had some left over that i ate for two days over quinoa and the roasted veggies below!


So below is pretty much everything else from the box, Potatoes, the other Eggplant, the Leeks, the cute lil Red Onions and the Yellow Squash, along with a carrot I added.  Tossed with the Orange Coconut Oil mentioned in the last post, salt and then roasted to delicious perfection!

I forgot to mentino the fresh Oregano in the last post - I haven't used it yet and it still looks good so I'm going to make some kind of dressing such as this one  (found on the big no-oil list of salad dressings online) and of course use more fresh than dried!


Dr. Fuhrman's Almond Balsamic Vinaigrette
Serves: 6 
1/2 cup water
1/3 cup roasted garlic rice vinegar (I used plain rice vinegar)
1/4 cup balsamic vinegar
1/4 cup raw almonds or 1/8 cup raw almond butter
1/4 cup raisins
4 cloves garlic, pressed (I used 3)
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon onion powder

Blend all ingredients in a food processor or high powered blender.

Local Box 7/24/14 - Vegan Greenling Meal Plan

so yeah, it's been AGES, like 2 months! For some reason suddenly i stopped getting boxes - they just never came, and ofr some other reason, I never called or emailed to see why.... I kept meaning to, then forgot, then thought...oh well maybe it's meant to be for a while. Then suddenly, the day I left for a road trip to West Texas, i got the delivery notice that my order was on it's way????

So i called my lovely next door neighbor and asked her to please bring the box in for me, take whatever would not last 5 days and put it away. I'm soooo lucky to have a neighbor like her

So....here's the box

I feel so unprepared having just got back in town - but another fun food thing I'm doing is getting the monthly surprise snack box from Vegan Cuts.  This month contained a sample of Ziggy Marley Orange-Almond cold pressed coconut oil, i'm dying to use it!  So maybe a stir-fry of Onion, Eggplant, Squash & Leek over rice

And maybe I will roast the potatoes with the coconut oil and Oregano, mmmmmm

I also have to cook for a dinner party and my friend suggested making an eggplant dip, stir fry the eggplant in the coconut oil, then blend it up with some tahini and spices.

Roasted Beets & Dill Dressing

it was almost like fall all the roasting of veggies

Here are the beets, a sweet potato and onion all cut up and ready to go into the oven.







Here they are deliciously roasted and topped with the amazing Creamy Vegan Dill Dressing that i am now addicted to. I didn't have a shallot so i used some of the fresh red onion from the box - there is also some baked tofu in there.





The rest of the sweet potatoes i just baked/roasted up to have on hand - this is basically how i do it - cut them in half, poke a few holes with the knife, then lay cut side down on parchment paper and bake for about 25-35 minutes depending on size





The kale ended up in smoothies every day!

Yukina is a green I haven't seen before! but here is a tasty looking recipe Yukina Stir Fry w/Tofu

Kale - smoothie as above, but there's some left over that I will steam tonight or make into a salad

Broccoli, i just steamed some for lunch, i really just love it plain like that

Sweet Potato - Beets - Onions - i am planning to chop these babies up, and roast them to perfection!

Oranges/Grapefruit - smoothie!

Dill - I must make a dressing i think  - like this one - Creamy Vegan Dill Dressing 


Here's one from the last box - i got mixed colored carrots and made this Carrot Soup!

Getting my G-BOMBS

so Dr Joel Furhman has this basic nutrition guidline he calls G-BOMBS.  It stands for Greens, Beans, Onions, Mushrooms, Berries & Seeds.
I do try to conciously meet these goals daily  - check out this on the go meal I made using the baby beet greens from the box, that I sauteed with onions, and served with chickpeas, mushrooms, seitan bacon and then i sprinkled with hemp seeds.



I used the sweet potatos for sweet potato fries. Yum



I made the same Mac & Kale salad as last box from Blissful Bites

The celery i ate in salads with the salad mixand fed to my guinea pig.

Strawberries!!!! - Local Box 4/3/14

happy happy joy joy it's Strawberry season! nothing makes me happier than this

Ok check out this smoothie using Strawberries - also a pear, spinach, almond milk and after this pic i added frozen banana, protein powder, chia seeds and cinnamon. OMG



I am also currently into a smoothie using Grapefruit, almond milk, spinach, chia and protein powder.

Avocado - can't get enough - here it is on a taco with black beans, boca crumbles & Follow Your Heart Monterey Jack


Kale - will make a kale salad but not sure which one!

Baby Beet Greens - am going to saute these babies up with the Green Onions and fresh Garlic from the last box and eat with quinioa, baked Tempeh and baked Sweet Potato

Fennel - I'm not a giant fennel fan - but i've had success with this Potato and Fennel dish
