Heirloom Tomato Salad

I have been Lazy very busy this week and hardly cooked at all! I did  however make the amazing salad from the recipe i picked up at Wholefoods. It's a series they are calling Salad Days, and they had flyers with the recipe on display with all the incredients. Convenient and beautiful!
Here it is:
2 heirloom tomatoes
1 English Cucumber (i already had regular ones at home so used those)
1 Cup Blackberries
1/4 cup Tangerine Vinaigrette dressing (the wholefoods "health starts here" brand)
1 T fresh mint
pinch of course sea salt
pepper

Slice toms & cukes into 1/4 in slices, cut mint into thin ribbons, arrange alternating slices of tomato & cucumber, sprinkle with salt and pepper, drizzle with dressing and garnish with blackberries!

I did also make the Ridiculously Easy Roasted Yellow Squash - yes crazy easy and amazingly delicious! I ate it so fast i didn't take a pic

Good Thymes - Local Box 5/19

Loving sthe summery changes!

Again i got the mystery (to me) herb in my box - i put it on the ever faithful Twitter and turns out it's Lemon Thyme! I could tell it had a lemony smell. Excited to experiment - i am not "good" at just knowing what herbs go well with what, but i think i may make a vinagarette with it, and also a tofu marinade for baked tofu.

Lemon Thyme
Shallot

Here's the recipe for Lemon Thyme Marinade for Tofu - the recipe calls for regular thyme but you know...also i don't grill my tofu, i bake & broil it.

I have a bag of quinoa so will use one sweet potato in this recipe Spicy Sweet Potato & Quinoa Salad

This Sweet Potato Salad with Apple & Avocado also sounds amazing & summery

Beets - juice some, roast the rest for just adding to my mixed salad greens

Heirloom Tomato - i found a recipe on a piece of paper at wholefood for heirloom tomato & cucumber salad, and they had a whole display with all the ingredients, so i got what i was missing and will post that later!

Summer Squash - cannot resist this Ridiculously Easy Roasted Yellow Squash & Onion recipe from Fat Free Vegan

Green Beans  - my kids tend to like these just steamed, rare of them, so i may not mess with a good thing and do anything with these.

Kale - juice it. or this from Vegan Yum Yum - Colcannon - it has Thyme too!

Mango - just eat!

Shallotts - not sure yet, i guess use as onions here and there

potato-green bean salad


I love different potato salads, especially if they are low fat - this one is perfect from Fat Free Vegan Kitchen - and it uses the green beans from the last box also! I think if i make this again i may add some red onion for a bit more bite. Also i didn't use miso - i used Ume plum vinegar and i used a ton of it cos it makes all food better!

Blackberries,crackberries Greenling Box 5/5

I have not juiced in a couple of weeks & am feeling the need so a bunch of this weeks box contents will be juiced - i'm planning a trip to Disney World in June and altho it's not hard to eat vegan there, i know that fresh green juices will be non existent so i'm really going to try and be extremely juicy & rawy & salady till then 

Ok on to the box:

Yellow Onion
Green Beans
Curly Kale
Bok Choy
Beets
New Potatoes
Red Radishes
Blackberries
Romain Lettuce
Red Leaf Lettuce

So i keep eating the blackberries everytime i open the fridge, they probably aren't gonna make it into anything fancy, but i did make a nice smoothie this morning with chocolate Zico, banana, frozen peach, blackberries & some green superfood powder.

I also just roasted a beet & chopped it up in a salad with red leaf lettuce  - but i forgot to take a picture i was so hungry!

I know i made this before but i'm super tempted to use the Bok Choy in this Bok Choy & Apple Salad recipe again. 
If not then Tofu Bok Choy Stirfry looks good!

     

With the Potatoes & Green Beans i'm going to make this amazing loking Potato-Green Bean Salad w/Lemon & Basil - we have some basil growing at my neighbors that i love to use!

Altho the Ethiopian Green Beans & Potatoes sounds right up my alley too
