Vegan Greenling Meals - Local Box 12/28/15 (updated)

***UPDATE*** Greenling answered me on twitter (follow them @greenling) as to why the random items - the recent weather madness impacted crops!! so they had to scramble - i love that they can, and i'm always happy with whatever i get :)


i'm such a neglectorino - haven't posted since october - no excuses it is what it is!

Got my lovely box yesterday - it's funny, this time there was a lot of things on the list that I did not get - at all.  the list in the box mentioned carrots, tomatoes, cress, cabbage, turnips... I got none of that - however I did get some things not on the list, so they replaced it all!! I don't feel slighted at all altho I would have loved some cherry toms.

here's what i got:

Lettuce - looks like a butter lettuce
Broccoli
Cauliflower
Grapefruit
Collards
and the renegade items:
Bok Choy
Watermelon Radish
Green beans
regular radishes - red and white

alright here's the plan

Bok Choy - i just want to saute these with some mushrooms and tamari and ume vinegar

Cauliflower - Cream of Cauliflower Soup from the Plant Powered Families cookbook  by Dreena Burton - it has Polenta croutons on it!!

Grapefruit - i love Green smoothies made with grapefruit

Radishes - i'm sort of over watermelon radishes so am passing them on to a friend who loves them, but the other little cuties - i ate some in a salad today but i've decided to roast the rest - thanks to a bunch of blogs online touting their roasted glory

Collards - New Years Day good luck food! My fave way to eat these are in collard spring roll wraps

Green Beans -  Also from The Plant Powered Families Cookbook there is this amazing recipe that I've made before called Saucy BBQ chickpeas and Green Beans - made with a yummy homemade bbq sauce and roasted in the oven!

Vegan Greenling Meals - Local Box 10/5/15

again i'm woefully behind but on the plus side, i've been busy preparing and eating all my fresh veggies.  I can't tell you how happy it makes me to recieve my beautiful green box full of the colors and shapes and tastes of nature, all grown locally and lovingly....

This post will have some foods from the last box that i didn't blog about.

so this week i got

Assorted Sqash
Collard Greens
Microgreens
Butternut Squash
Suyo Cucumbers
Bibb Lettuce
Shishito Peppers
Meyer Lemons
Dill

well i just steamed the two lovely squashes i got,  yellow zucchini and a pale green pattypan and am about to eat them for breakfast, so there's that!

Collard Greens - i want to make a raw-ish spring roll, either blanching the leaves or plain and wrapping them around some jullienned veggies with some hummus spread too.  I bought red bell, jicama and carrots for this!  something like this   - Raw Collard Green Wraps

Microgreens - i LOVE these babies, they taste good even just plain stuffed into my mouth. however i usedt them in this potato salad thing. Roasted red postates, tomatoes, microgreens, Dill, annnddd those very yummy Suyo Cucumbers and a dollop of hummus



Here's another version from another day - i ate this several times this past week:

those cucumbers were so good, they were very long and skinny and curved and had a more ridged skin, and i couldn't stop eating them!

Meyer Lemons - oh yeah, these were squeezed on the above salads!

Shishito Peppers - i love these grilled in restaurants with the big salt on them, but i'd have to dig up my grill pan since moving....so maybe not. so i could ROAST them instead!

here are some things from the past box:

pretty white eggplant, green bell peppers,  and yellow zucchinis that i roasted into roasted oil free rattatouille

Vegan Greenling Meals - Local Box 9/7/15

Happy Labor Day!


Malabar Spinach
Garlic Chives
Jujubes
Pears
Eggplant
Sweet Peppers
Limes
Butternut Squash
Fingerling Potatoes

According to the Greenling insert - Malabar Spinach is not directly related to spinach, it's more like a "very distant cousin" Raw it has a peppery flavor but cooked is more spinach-y, so I will likely just saute this either alone as a side to a meal or with some Field Roast sausage & peppers.

Pears: well just today I made a juice in the vitamix of Pears, an apple and frozen blueberries, it was delish.

Limes - I can never have enough limes, however I am going to make this Tahini Lime Salad Dressing as I have some basil in the fridge too, and you know i'm a huge fan of Tahini dressings!

Butternut Squash - I am going to try a Butternut Squash and Quinoa chilli from Chef AJ's ultimate weight loss program - it has all of my fave ingredients - black beans, jalapeno, corn, fire roasted tomatoes....

Fingerling Potatoes - roasted, say no more

Eggplant - i'm going to attempt roasting in think slices with no oil - sprinkled with italian seasonings. Maybe onions and garlic on there too

Jujubes - not a fan - we will see.... here's a pic of them though because they are kind of interesting i just don't love the taste that much and haven't found anything amazing to do with them otherwise

Vegan Greenling Meals - Local box 8/24/15

Hi people - sometimes the box deliveries go buy and i've eaten up all the goodies and then it's too late for a blog post!!

So here's last week's box:

Butternut Squash
Assorted Peppers
Basil & Mint
cucumbers
Sunflower Shoots
Sweet potatoes
Pears
Lady Cream Peas

I'm afraid i didn't really take any pictures this week, back to school business meant i was just cooking, eating, putting in tupperwear ect...

i love the sunflower shoots!! I added them to a salad one day and then i made this amazing Avocado spread with mashed chickpeas, cilantro, red onion and the Shoots - so freaking delicious - i HAD to take a pic of this photogenic beauty




Basil & Mint - these went in amazing smoothies, i really love adding herbs to smoothies - it gives a little surprise taste depth

Cucumbers - ended up in a delish salad from the 22 Day Revolution book that i picked up from the library - it has some good recipes! I made a cucumber, zucchini, carrot salad, spiralized with a tahini dressing!

Lady Cream Peas cooked up i my Instapot Electric Pressure cooker, and I ate them with baked Sweet Potato and Butternut Squash and brown rice, simple and delicious.

New box tomorrow so will do a better job keeping up! :)

Vegan Greenling Meals - Local Box 7/13/15

this box may just be one of my faves ever so much that I love about Summertime!



here are the contents:

Mango
Canteloupe
Peaches
Red Potatos
Jew Mallow
Okra
Carrots
Red & Yellow Tomatos
Assorted Squash
Poblano Peppers


Mango - a delish breakfast
Peaches & Canteloupe will be the same!

Red Potatoes - i just roast these and eat them with beans or chili all the time

Okra - LOOK - i just roasted them with some Tony Chahere's then eat them right away! I could do this every day

The tomatoes - there just isn't anything like a fresh farmer's market tomato! I ate the yellow one in a bowl of rice & beans and my son had the little red one on a a vegan grilled cheeze

Squash i just ate steamed with vinegar and nooch on top - i loved the mixed colors



Jew Mallow - i have yet to find a recipe that really appeals to me.... we shall see, may be guinea pig food!

Poblano Peppers - I think i'm going to get my boyfriend to make these amazing looking Vegan Stuffed Poblanos with Avocado Cilantro Sauce!

Vegan Greenling Meals - Fourth of July!



it's been quite a while folks and i apologize - seems i've been too busy to actually make stuff from the box and have resorted to just steaming a veg, making a quick salad and chomping on the fruit as is. Which is all good and delicious and nutritious

Got an amazing box on 6/29 and layed it all out on my counter and failed to take a photo - booooo

but here's what it had

Finglerling potatoes
Heirloom Garlic
Mixed tomatoes
Spaghetti Squash
Multiplying Onions - ??? not sure what that means
Bibb Lettuce
Avocado
Eggplant
Mango
Bell Pepper

again no photos but I have already eaten an amazing salad of just the lettuce and one of the tomatoes that i just splashed with balsamic only.  That tomato was was the most delish thing I've ever eaten. i could eat a million just plain

I baked that spaghetti squash and ate it with just some balsamic, pepper and nutritional yeast.

Bell pepper had some raw as a snack!

Today for a 4th of july pot luck my boyfriend who is a gooood cook made this incredible potato salad from the fingerling potaotos (we suplemented with another bag of them from Wheatsville)
Roasted the potatos with some olive oil, salt and pepper then tossed with a combo of unsweetened coconut yogurt & vegenaise, some of the multiplying onions, dill and garlic (shhhhh we won't tell the other people it's vegan)

Vegan Greenling Meals - Local Box 4/20/15

This week, 4/20 symbolized the arrival of my box of beauty, health, vitatlity and life!



Dinosaur Kale
Cilantro
Lettuce
Carrots
Valencia Oranges
Swiss Chard
Zucchini
Watermelon Radishes
Strawberries

I have lately started to seriousy pump up my vegetable consumption - the lovely Chef AJ who is a plant based chef and weight loss guru suggests eating 2lbs a day, 1lb for breakfast. And I'm doing that! I have to say i do feel a vitality i haven't felt in a while.  

So what that means is that it's 4 days since i got my box and I've used so much of it already!

Kale - I love sauteeing Kale with onions and mushrooms in low sodium veggie broth, and sprinlking with balsamic vinegar and a bit of nutritional yeast.  Also, we've been out of spinach so I've been putting a leaf of this in my kid's morning smoothies and they haven't complained....so that's a WIN

Cilantro - I could throw cilantro on anything and it makes me happy, but see below with the Chard for a recipe

Lettuce - GIANT SALAD - look at this bounty  - it has the carrots and the watermelon raddish also! Oh i think for the reast of the head of lettuce I'll add strawberries to the next salad



Carrots - some whent into that salad but I will likely steam some for breakfast or snack and throw a few in my son's lunchbox. He like them steamed with Earth Balance and salt and pepper. Also made a juice for my friend Zoe with some of the oranges!





Valencia Oranges - mmmm fruit salad.  with the Strawberries,  banana, pinapple, mango and flax 



Swiss Chard - this recipe of Swiss Chard and Chickpeas was perfect! I had parsley, garlic, onion, tomato paste   and a can of chickpeas, cilantro and chard from the box - it was very very tasty



Zuchhini - it was so big and perfect I'm gonna spiralize it and figure out a sauce. Check back!

Vegan Greenling Meals - Local Box 4/6/15

I love getting my box on Mondays! It kind of sets the stage for the week of joy:

here's what i got:

Baby Collard Greens
Spearmint
Green Onion
Oyster Mushroom
Lettuce
Kale
Strawberries
Meyer Lemons
Sweet Potato

i really only need to say one word  - and that is TACO's!!

I am going to make Oyster Mushroom Tacos and you know what? I may just throw in the Collards to super food it all up

Otherwise the Baby Collards are likely to end up in a smoothie - I've been back at the early early gym routine and sometimes make up a smothie the night before and just blend up in the morn.

Spearmint - the first thing i thought of when I saw this beautiful bunch of leaves was minty water. Not sure why, but I can picture an ice cold mason jar full of water and mint.  Refreshing!

I can also make this very yum looking Strawberry Mint Smoothie!
I can add mint to any smoothie really

Kale - now both my kids are obsessed with kale saleds massaged with Annie's Goddess dressing - so I'll probably get none of this - can i complain really??

meanwhile here is a picture of an amazing salad i made with the lettuce, micro greens, watermelon radish & fennel from the last box. I added a dressing made with tahini, red wine vinegar and the oregano. It was absolutely amazing.

Vegan Greenling Meals - Local Box 3/23/15

i love the bounty of a new box full of beautiful fruit & veggies!




Here's what came today:

Heirloom Garlic
Oregano
Grapefruit
Fennel
Sweet Potatoes
Microgreens
Swiss Chard
Watermelon Radish
Green Leaf Lettuce
Brussells Sprouts

Except i can't actually see any brussel sprouts, well except extremely tiny ones, like the beginnings of ones, so honestly, I'm not sure what to do.... I will investigate further and see

here's what it looks like!



Heirloom Garlic - well, they are so beautiful, and purple. I'm probably just gonna saute them with something, onions, tomatoes, beans, and make tacos, or scratch the beans and make a pasta sauce. with the Oregano too!
Could also use the garlic with the Swiss Chard 

I will also use the aromatic Oregano in a salad dressing to top the Lettuce and Micro Greens

Sweet Potatoes - I just eat them all the time - lately i've been steaming them and mashing up and putting in tacos, or roasting and eating as home fries.

Fennel - I haven't decided yet - but I found this great list of Top Ten Vegan & Vegetarian Fennel Recipes - so one of those fo sho


Meanwhile - here is what I did with the Collard Greens from last box - beautiful almost raw wraps that I shared with my dear friend Rochelle after some yoga and talk:


I steamed the leaves a little to get them softer, then made this Sweet Ginger Dressing - and we filled them with bell peppers, grated carrots, cucumbers, spiralized beets, red cabbage, avocado & Nutritional Yeast and they were nothing short of incredible!

Vegan Greenling Meals - Local Box 3/9/15

Hi gang - it's been AGES since I posted - I've been all consumed by packing and moving to my new house, and my new delivery day of Mondays!

I got my first box last week - so exciting - and perfect timing, my fridge was bare, I had been existing on packaged food and take out during all the upheaval.

Also I've decided to add onto this blog and post about other local vegan eats, new products, surprise vegan items at local restaurants ect...

back to business - here are the box contents:

Lettuce
Rainbow Carrots
Cauliflower
Parsley
Turnips
Avocado
Grapefruit
Green Onions
Green Garlic
Collard Greens

seeing as I've had the box for a week i've already made a bunch of yummy stuff

Salad, with Rainbow carrots, and avocado and apples.

Cauliflower:
I made a Cauliflower rissoto with half of it - you put the cauliflower in the food processor till it's the consistency of rice adn then saute with garli, ocnion and ad some broth and other things and simmer till soft, soooo tasty


Than I used the other half with the turnips to make Clauliflower/Turnip mash. Steamed them up then mash in the food processor, add Earth Balance, salt pepper, splash of plant milk and some nutritional yeast, so delicious.



Green Onions - i have been using these chopped up on everything this week, tacos, salads, lentil soup...

I want to make wraps with the Collard Greens.

Local Box 1/22/15 - Vegan Greenling Meal Plan

I'm still gettting really into eating about 80% Raw right now- it's so much fun to explore

so this weeks delights: (box shows kholrabi that came in some box, i got kale instead)




Lettuce
Chinese Celery
French Sorrel
Pea Shoots

So of course Salads with the Lettuce, Cabbage, Sorrel & Pea Shoots

Also maybe this Lemony Green Sorrel Smoothie

and I'm kinda into this Pea Shoot & Pear Green Smoothie

Kale - a kale salad, i've never had the red Kale, will try in a smoothie too

Chinese Celery. This is a new one to me, it looks a bit like Italian parsley on the leaves and there is no thick stalk like traditional celery. I took a bite and it was quite strong, I don't think I would want it raw. Research shows it's added to soups and stir fries for flavor.  A noodle soup sounds good

Oranges - I'm kind of obsessed with smoothies made with Orange, Spinach & Basil

Butternut Squash - I have not made a butternut sqash soup yet this season! must do

Raw Burritos & Rainbows

I made so many amazing raw dishes this week. I really kind of like the raw dishes, there's a lot of variety even when using many of the same ingredients. And altho there is so much prep with chopping and mixing, it generally all comes together so fast and the clean up is soooo easy.

I used the Collards for two different but similar things - a veggie wrap with carrot ribbons, cucumber, avocado & tomato

then I also made a couple of incredible colorful salads. I've always loved big salads but for some reason when eating more raw food in general, they are tasting even better and looking so much more vibrant and colorful.  One thing i'm putting a few less ingredients, like nuts and adding more variety.
I used beets, arugula, watermelon radishes, green onions, the mixed salad greens

Local Box 1/8/15 - Vegan Greenling Meal Plan - Happy New Year!

Happy New Year folks!

I got caught up in the holidaze and didn't ever do a follow up post on the last box, let me tell you though, it was all just yummy ok? Ok.

Here's what I got in the first box of 2015!



Collard Greens
Mixed Beets
Arugula
Key Limes
Salad Mix
Spring Onions
Garlic Chives
Sunchokes
Grapefruit
Apples
Watermelon Radishes
Purple Turnips

So for kicks and to change things up a bit, i'm following a 21 Day raw challenge from Fullyraw Kristina.  She's a youtouber fully raw vegan who is super animated and energetic and pretty fun to watch.  Her challenge started Jan 5th and it introduces one raw meal a day, so you don't have to go 100%, just one meal a day to check it out. It's fun and delicious and I've been getting into it and eating raw for some of the other meals too! It really is fun to challenge yourself and switch up the routine like this, and honestly, i feel great.

Collard Greens will go ito raw burritos and raw veggie wraps

Beets - smoothies and grated into salads

Arugula - salads, and they are in those burritos

Key Limes - always using lime juice in the sauces

Salad Mix - ummmm salads

Spring Onions - Kristina uses these a lot in her sauces for so much flavor

Sunchokes - i think these can be raw, i looked up some recipes and often the are mixed with Apples in a salad, i didn't care for the ones I found so I may make something up!  Last time I had these I roasted them and you know , that was good too :)

Grapefruit - smoothie, or i found this ayurvedic recipe for it with Honey, Ginger & Cardamom, and I can just use agave instead of honey

Watermelon Radishes - BIG SALADS

Turnips - apparantly these can be eaten raw too, who'd have thought? I'll let you know next post - but i do so love these baked with sweet potato so I'll see what i feel
