My first Greenling Box!

I am so excited to be signed up with Greenling organic delivery. www.greenling.com
I definitely get in a rut with my produce & buy the same old stuff every time. Also, it's hard for me to get to the store all the time as a single parent. Greenling is not expensive and there is not a commitment, AND i could get every two week delivery, even better for my budget. I decided to sign up for the Local Box, but you can change your order or add to it anytime(by the designated deadline).
I do still fear thought that I won't use it all up, and i know i need help with cooking ideas. Greenling offers recipes with each box, and there is a Greenling blog with meal plans & recipes, but nothing vegan. Soooooooooooo, here i go. I'm gonna blog about what i cook or intend to cook.
I'm torn between doing the posts when i get the box and just listing what i intend to make, and posting afterwards with what i made and how it was. we'll see - maybe both.

Here's what was in this weeks box:
Avocados
Mizuna
Red Leaf Lettuce
Red Beets
Sweet Potatoes
Cabbage
Onions
Mixed Superfood Greens
Parsley
Green Shallots

So far i used half an avocado with some beans & tortillas from Gueros, and had a basic salad with the Lettuce, i threw in a bit of the Mizuna for kicks. Mizuna is a japanese green.

Tonight i made Soba Noodle Salad With Mizuna - I used the Green Shallots in place of the scallions. Delish

I plan to use the greens tomorrow in black eyed peas & greens, and some sweet potato in veg chili w/sweet potato.

I am going to use beets & some cabbage in Vegetarian Borscht

I have no idea what to do with the parsley

The box came with a recipe for Penne w/Goat Cheese, Olives & Turkey - i think i will make it, and sub cannelini beans for the turkey & just omit the goat cheese. Someone suggested raw macadamia nut chz to replace but i am tooooo lazzzyyy

Will most likely use any leftover cabbage & greens & sweet potatos in a version of the Weight Watchers zero point soup.

Avocado is always used in my house, i generally put it in salads or spread it on toast.
oh yeah the onions, they'll go in the WW soup too, and the chile

Already with the soba noodle mizuno recipe i stepped out of my box, i think this is going to really good for cooking inspiration!
