Local Box 12/27/12 - Vegan Greenling Meal Plan

I feel lucky that my delivery day is Thursday so I didn't miss a box due to Christmas! whoohoo

Ok here's what I got this week:

Avocados
Mixed Greens bag
Broccoli
Collard Greens,
Parsley
Cucumber
Green Garlic
Green Cabbage
Grapefruit
Turnips

Mmmmmm - Avocados - i eat them ALL the time - i put them in my daily smoothies, I eat them on salads, which i will do with these greens, I eat them on tacos. So glad for these!
I think the Mixed Greens may also make their way into a smoothie.

Broccoli - check out this Broccoli with Garlic Butter & Cashews - may be a nice change from the usual steamed

Collard Greens - In my Wild About Greens cookbook by Nava Atlas i found a tasty looking Quinoa with Greens and Chickpeas - I can use the Green Garlic to stir fry the Collards first.

Parsley - I will try and find a space to add this creatively, some may go in a smoothie/juice also, parsley is so healthy, it has anitoxidants, it's anti-imflammatory, it has vitamin C and A, and more

Cucumber - Salad, Smoothies & Guinea Pig food - i'm sorta craving a quinoa with cucumber, bell pepper, carrot, onion and balsamic

Cabbage - My daughter is currently going through an Irish obsession phase, so maybe, just maybe, she will eat this Irish White Bean and Cabbage Stew if i "market" it to her correctly. It's worth a try!
It only uses half a head of cabbage so I am going to find a coleslaw recipe with the remainder. I always crave coleslaw

Grapefruit - smoothie - duh

Turnip  - this Autumn Vegetable Puree sounds sooo good and I love the idea of how nutrient dense it is with the three vegetable pureed together.

It's so easy being green

Glorious greens - they are so healthful and amazing.
I get in a rut when i buy my own, i buy baby spinach, and kale varieties, and that's about it. So it was a welcome change to switch it up

I did try some mustard greens and some chard in my morning smoothies, they went down well!

Here is a salad I made with the mixed salad greens, topped with ths slicing tomatoes. I dressed it with a Sesame citrus dressing from the Appetite for Reduction cookbook


I used my Wild About Greens cookbook for a couple more delectable recipes

First was Citrus Braised Mustard Greens with Apple & Pine Nuts - I used the orange & orange zest from the local box too. Very tasty but Mustard Greens are very sharp, the kids didn't go for it. I ate it with some delicious mashed potatoes and ended up mixing it all up together on my plate and eating it like that.


Next was Chard with Brussel Sprouts and Red pepper - this was so good. I ate it with some red and white lima beans or some kidn of bean i found at wholefoods.

Last night I invited my brother Fernando over for dinner, he's really committing to plant based eating so I wanted to share some different foods

I made the Oven Roast Sunchokes - and we ate them up from a bowl as an appetizer, so good (i forgot to take a pic, or maybe Ferndando at them up too fast)

Then I made the Curried Cauliflower Sweet Potato Soup from Fat Free Vegan - huge success, a little spicy, perfect, even my son liked it!

Local Box 12/13/12 - Vegan Greenling meal plan

I love a box full of leafy greens! So full of health n stuff

here's what we got: (thi pic shows limes, i got grapefruit instead)

Tomatoes
Mustard Greens
Salad Mix
Swiss Chard
Cauliflower
Louisiana Shallots
Sweet Potatoes
Sunchokes
Grapefruit
Oranges

I'm so excited to have sunchokes! I swear in the whole time I have been getting the Local Box, they have been in the box on the weeks I don't get it.
I feel like i still need to learn more, but I kind of like the look of these basic Oven Roasted Sun Chokes - i found one with garlic and rosemary too



Cold weather + Cauilfower + Sweet potato = amazing soup

Curried Cauliflower & Sweet Potato Soup from Fat Free Vegan is difinitely being made

Ok the greens - I think I mentioned that I'm addicted to my Nutriblast shakes every morning and sometimes lunch too. I get in a rut with the greens, spinach or kale generally. So i will branch out this week with Chard and Mustard Greens.

However, I still, even though I have tried, not used my gorgeous cookbook Wild About Greens by Nava Atlas  - look at it, a gorgeous hardback book fool of deliciousness.


There some very tasty recipes using some combos of items from the local box, it's going to be hard to decide, especially as they overlap with my soup i'm so gung ho for above. The ones that caught my eye:

Chard with Brussel Sprouts & Red Peppers - can sub in mustard greens also. Sounds like a great holiday table recipe
Coconut Cauliflower Curry with Mustard Greens & Spinach
Curried Sweet Potatoes with Chard & Chickpeas
Citrus (Orange!) braised Mustard Greens with Apples &  Nuts
WOW how to pick!


I'm definitely going to make a salad with the Salad Greens and make Orange-Sesame Vinaigrette dressing from Appetite for Reduction by Isa Chandrea Moskowitz

you butternut ignore this post....

if you love good food that is

that pun is awful - but coming up with titles is sometimes an excrutiating task, forgive me

anyway had a lot of fun with the stuff this week - made 2 fantastic Butternut Squash recipes - and the main thing that made them both a definite SUCCESS was that my son loved them - said he wanted them every day in his lunch box. The girl child, well....lets not go there

First was this Lemony Quinoa with Butternut Squash - it also used the Louisiana Shallots
apparantly i didn't take a picture of this food, but you get the drift, quinoa with chunks of butternut squash


Then the best thing ever was this Butternut Squash Black Bean Chili - OMG so so so so good.

i only used half a tablespoon of the chipotle, could have used more but was worried about the kiddo. This was probably the right amount for a kid

with the Arugula i made this quick Arugula with Orzo - simple, unique, this arugula was strong tasting, and i found that this recipe was improved by a splash of balsamic


Took this Watermelon Radish salad to a party and it was gone in seconds - it's a good party food because it looks so stunning

Local Box 11/29/12 - Vegan Greenling meal plan

in this weeks box were items that felt more like spring! weird texas....


Arugula
Pea Shoots
Kale
Louisiana Shallots (these looke like sort of fatter green onions)
Slicing Tomatoes
Avocados
Live Parsley Plant!
Watermelon Radish
Limes
Butternut Squash

I think the pea shoots will be lovely in just a little salad with avocado and tomatoes and maybe i can make a dressing with the limes and miso
Here's one i found with beets that looks good if I get the urge to go buy beets - Avocado Beet Pea Shoot Salad

Arugula is tough sometimes, i love the peppery taste but it can be strong - this recipe for Arugula with Orzo & Garden Tomatoes looks ideal - i would just leave out the cheese.
Kinda also into this Arugula Pesto idea - we shall see what occurs

I'm going to make this Watermelon Radish Salad

When i get a bunch of limes I love making rasperry lime muffins

Butternut Squash - hmmmm i am torn between this Butternut Black Bean Chili and this Lemony Quinoa with Butternut Squash - or maybe both - as i still have the one from last box!

Radishing...


I had so much fun shopping for the ingredients we needed, and cooking with my son Gabe, I wish i had taken a picture of him in the kitchen but we were so immeresed in chopping and stuff that it never happened!
And we still need to make the butternut squash kidney bean stew!

check out this gorgeous Salad with Aurgula, Lettuce and the Watermelon Radish - it had a dressing using avocado and orange juice - for the life of me i cannot find it online again! It called for macadamia nuts which i didn't have so I used some pecans and some pumpkin seeds. Pumpkin seeds are high in zinc and zinc absorption is aided by citrus so I thought it would be a good combo!



Here is the carrot turnip soup - this was in the slow cooker from the cook book "Fresh From the Vegetarian Slow Cooker" cookbook - it was a little heavy on the rosemary, maybe because some of the little leaves feel off and so actually got in the blender when transferred the soup to it.  but nonetheless tasty and so healthy it makes my head spin.


Pasta Con Broccoli - doesn't look too pretty, but we made it for my parents and they liked it!

Rad-atouille

So for about a week of this time i was on a juice cleanse so didn't even get to eat! however before starting i did make this fantastic ratatouille using the eggplant and zucchini - it was made in the slow cooker!




I also made mashed potatoes with the red potatoes - i found a recipe using the Whole Foods app - it had tahini, almond milk & lemon juice, i brought it to a pot luck, super good



I still have the japanese turnips left - I found a recipe for baby & turnip soup so will add that on to next weeks makings!

Local Box 11/1/12 - vegan meal plan

Ya'll won't believe it, i have found a use for the persimmons!

I have been having smoothies made in my Nutribullet every morning for a month now, and also many times for lunch too. Now that my fave summer fruits are not so easily available organic and fresh I have been using mostly apples and a couple of frozen choices.  soooo tadaa, i added one to the smoothie and it was really good.

Ok here are this weeks items:

Slicing Tomatoes
Summer Squash (zucchini)
Eggplant
Broccoli Greens
Red Russian Kale
Sweet Peppers
Fuyu Persimmon
Japanese Turnips
Red Potato
Gala Apples

Tomatoes - probably on toast or something with hummus, and salads

Zucchini - well, when i see Zucchini and Eggplant together, I think ratatouille! I found a recipe in The Vegetarian Slow Cooker that also uses a red bell pepper, so I will use one of the sweet peppers!

Broccoli Greens AND Russian Kale - well as much as would love to make some groovy recipe, I'm so addicted to my smoothies that these greens will probably be used in those every day. In fact, here is a picture of one of those smoothies. It has a Broccoli green leaf, 2 kale leaves, persimmon, gala apple, strawberries, avocado, then topped with some superfoods, Maca, Cacao & Hemp, and blended with coconut milk.

one potato, two potato

so many potatoes these days, and i love them all!

this week i made a lovely potato salad using the red potatoes with green beans - and the dressing was basil and lemon! It was really good and tangy - the recipe was from Blissful Bites by Christy Morgan  - you should check out her blog The Blissful Chef - she's a really awesome vegan resource!


I used the sweet potato and one red potato in Creamy Curried Vegetables from How it All Vegan - it's a cool recipe because you can use any vegetable you have, i also added mushroom, purple cauliflower and kale. and i ate it with aresenic - i mean rice oops

the lettuce, microgreens and tomato were used in this very good salad  - and I made Lemon Miso dressing again from Blissful Bites, I also added radishes that were left over from the box before, and hemp seeds for super nutrition.


The eggplant i roasted whole with garlic and pureed with lemon juice, tahini and olive oil and made a really good spread, here i ate it on a rice cake - yes people do actually eat rice cakes - with tomato and cucumber


Apples were eaten by my daughter and a couple in my morning smoothies.

I am the egg-plant

This is a combo post as I didn't post what i made from the last box yet - yikes

but first look at these gorgeous and cute eggplants! I'm never a huge fan when I make something with eggplants myself but I'm determined this time








So from last box check out these amazing grilled sweet potatoes! Marinated in Lime Maple marinade from "The New Vegetarian Grill" cookbook. They were so  so good, I had them with a grilled veggie burger -  and I had them the next day in a little taco with avocado and chipotle tabasco!


Then i did make the butternut squash soup in the vitamix, very easy, soaked cashews overnight then made cashew cream in the vitamix, roasted the butternut sqaush, sauteed onions carrots and celery, put it all in the Vitamix, and blended till it got warm. It never got really hot, and it seemed like from blending so long it got a very light frothy texture which is different. I ate it sprinkled with pumpkin seeds

Sweet Potato Greens
Sweet Potato

Meyer Lemons

Tomatoes, microgreens and Lettuce will be in a big salad! And I would like to find a salad dressing using the Meyer Lemons

Sweet Potato Greens - I will probably just saute, the box came with a recipe, onions, crushed red pepper and soy sauce, sounds good

Sweet Potatoes - I'm having a hankering for a curry made with sweet potato, and I know I've made one before so I'm going to scour my cookbooks and fine one!

Red Potato - I did make mashed potatoes with the ones from the last box, basic with coconut milk, Earth Balance and Follow Your Heart vegan sour cream. So with this batch I found a Potato Salad with Lemon Basil Dressing in my Blissful Bites cookbook.

Eggplant - something like this sounds perfect! Skillet Eggplant and Lentils with Almond Parmesan from Fat Free Vegan

Fall-ing in love w/my Local Box 10/4/12


oh puns, so fun yet so corny. there was no corn in this box so that was NOT a pun

Yes, this box seems to be a true transition to fall....

there was supposed to be an Avocado but it wasn't in there, sometimes they run out of something or it could have been a mishap, i'm so generally happy with Greenling all the time and i had avos anyway that i wasn't inclined to call and get it sorted. but i KNOW they would have fixed it if i had.

Lettuce = salad always, and i will put in the Green Shallots & Radish! I acutally did this already and the radishes are very spicy and lovely! They are white and sort of long, not round and red

Basil - will just add here and there or maybe attempt a vegan pesto

Sweet Potato & Lime -  I will make Grilled Sweet Potatoes with Lime Maple marinade

Red Potatoes - my son loves potato salad and mashed potatoes so lets see what happens this week.

Butternut Squash - I think I will make a soup in my vita-mix - like this one! Butternut Squash Soup - I could even add an apple to this

But my daughter is a Gala apple fan, one of the few fruits she eats so, they will likely be hers

one potato two potato

Here is the delicious Dragon Bowl I made - modified from The Garden of Vegan: How it all Vegan again
Rice, kale, carrots, onion, tofu, and sweet potato topped with a home made dressing.

Here is the crazy salad i made
purple hull peas, microgreens, arugula and tomato from the box, very delish

I did grill the okra but forgot a picture, they were ahhhhmazing, i ate the whole batch - just toss with olive oil and salt and grill and eat

The regular yukon potatoes I made this fantastic Warm German Potato Salad. - The dressing was sauteed red onions and apple cider vinegar, the "bacon" crumbles were chopped up Tempeh with soy sauce, blackstrap molasses, ketchup and a bit of liquid smoke. topped with green onions!

Local Box 8/20/12

The first thing I saw when I opened this box was these two big beautiful tomatoes.  I was dinner time so made toast, marmite, avocado and tomato.  It reminded me of my best friend Claudia in London, it's the kind of thing we always made for midnight snacks as teenagers in London.

Nice usable box this week, here's the goods:

So, yeah, the Tomatoes - I so rarely buy big tomatoes, I'm always getting cherry toms for salads, but I love them, and i have this amazing harvest bread from Whole Foods, so I'm just going to use them up on sandwiches and toast things like that.

Purple Hull Peas - i already cooked them up and I found in my Wild About Greens cookbook a Pinto Bean salad with watercress & Dill, that has Arugula in it, so I will make it with the peas instead, it uses a tomato too! Oh, and i will actually sub the Micro Greens for the watercress. yes!

Okra - after the huge success of the grilled Okra last week I think i'm going to do it again here at home and see if my kids like it! I predict my son will, my daughter won't

Yukon Potatoes - I just finally read through an issue of Vegetarian Times i've had lying around for weeks, and found a very tasty sounding Warm German Potato Salad  - it has temeph as the "bacon"

Lemons - not sure - meyer lemon's seem so special, but I will probably make salad dressing,

Sweet Potatoes - i kind of just feel like steaming these and eating them in a rice bowl with kale and avocado.  I also found in my cookbook The New Vegetarian Grill by Andrea Chesman, a recipe for Grilled Sweet Potato with Maple Lime Marinade.

Grillerific

So the secret stuff I couldn't post last week was that I was bringing a bunch of the food to a bachelorette party for my BFFL Cory. She knew we were having the party, she just didn't know where, what or how.

The place we went had some fancy camping - nice huge tents with beds, porches, electricity, AC and GRILLS!
Another girl was bringing tomatoes and mushrooms for kebabs, so I added the zucchini, and we grilled that


We sliced an oiled the the eggplant and grilled that


We grilled avocado

We squeezed the limes on the avocado and everything really

but the star of the grill, the grill thrill - was the Okra. Everybody went mad for the okra, just a litte bit of oil and salt and perfection



Ok, so I tried the pear in a salad, it was good. Crispy and a little bit sweet, here it is in the salad with box lettuce, and avocado.


The most amazing thing i made this week were the Butternut - Black Eyed Pea tostadas.  LOOK AT THEM!

White Eggplant - Local box 9/6/12


I love it when i get a vegetable in a different form or color than is usual. Feels exotic!
This week I got White Eggplants!

I have secret plans for the Zucchini, Okra, Eggplant and Avocados that cannot be revealed in public...yet - .hmmmmm, you will have to wait till I post the box results next week.

I'm drinking LOTS of smoothies lately though and will probably use an avocado in one this week, I also bought these cool new things made by Amy's, frozen Sandwich Rounds, vegan and gluten free, that kind of beg to be toasted and topped with avocado & tabasco

Sweet Potato Greens - I think I got these last year but I don't remember what I did with them - I did some research and found that you can treat them like spinach.  I still haven't used my Wild About Greens cookbook! What looks good to me right now is Curried Spinach & Chickpea Soup - sub the sweet potato greens!

Limes - I really want to make this Cilantro-Lime Dressing - will just sub Agave for the Honey

Kefir Pears - there was a note with the box pointing out that this kind of pear is hard when ripe and suggests slicing in a salad - yeah! So will do that with the lettuce

Persimmons - these baffle me - I don't think I had success last time we got these, and there are a ton in this box! Here is a site with Five Ways to Eat Persimmons that is helpful - mine are green so I think they are not ripe yet, I will leave them in the bowl for a few days and see. I'll keep you posted

Butternut Squash - the cutest tiny butternut squashes ever! keeping the trend of using a cookbook i've never used before (i'm a cookbook hoarder!) - I want to make Black-Eyed-Butternut Tostadas from Viva Vegan by Terry Hope Romero - ps this recipe calls for making your own tostadas by frying corn tortillas, i am WAY too lazy for that so will use premade tostadas :)

Delish



I had a good delicious time with this box!

Check out this ridculous salad - Amaranth Micro Greens, Lettuce, cherry Tomatoes and Red Bell pepper from the box. Sooo amazing
There was also mushrooms, cucumber, pumkin seeds and tempeh bacon, and i topped it with Annie's organic Goddess Dressing

The peaches and pears ended up in the kid's first week of school lunch boxes.

Acorn Squash - this soup was so good, a little bit spicy, perfect. I ate it here with Toast and Hummus

Amaranth micro greens & more! local box 8/23

What a great box this week! but first check out this amazing TLT i made with last weeks gorgeous tomatoes and lettuce:


Wholefoods fourteener bread, vegannaise, mustard, a dash of tabasco, tempeh bacon, tomato, lettuce and red onion. yeah, i had this 3 days in a row.

I also did make that baked beans in the acorn squash recipe and it was EASY and delish but i forgot a picture.  I may make it again this week.

This week:
Amaranth micro greens - gorgeous, purple/red color


Fresh Pinto Beans
Okra

Bibb Lettuce
Cherry Tomatos - look at all the colors, so beautiful


Red Bell Pepper
Yukon Potato
Winter Squash (Acorn)

Amaranth - i had to research these  a bit, turns out the more mature leaves are better in stir fries, but these micro greens will work in a salad so I think i will try that, and get max nutrition

Okra - roasted or maybe grilled now that it's not as hot outside, i mean its still hot but somehow feels more bearable

Pears - I need to do some heavy juicing here coming up, so the pears will be my fruit addition to the veggie green juice

Peaches - i'm addicted to peaches in Wheatabix right now with coconut milk and a dash of cinnamon.

Bibb Lettuce - i could only imagaine a salad but the box came with a Bibb Lettuce and Pea Soup recipe that sounds weirdly good :)

Cherry Tomatoes - salads, or sauteed or popped in the mouth - i love these

Red Bell Pepper - again salads! I just bought tofu and and some hatch chiles to make tofu scramble so may add these and the tomatoes to that!

Yukon Potato - i recently made roasted potatoes with Marmite and think I will do it again.  SO addicting

Acorn Squash - maybe this Roasted Acorn Squash Soup - or i may just roast and use chunks in a salad or quinoa

Long Awaited Local Box 8/9/12!

I skipped a box when i was out of town, then i went out of town AGAIN but I came back today, the day after box delivery, so I kept it and wrangled my guinea pig sitter/neighbor to bring in and put away my box, I just couldn't bear going another 2 weeks without my gorgeous produce, especially after a beach diet of Fritos and French Fries.

So here is what was in this weeks box:

Peaches
Tomatoes
Assorted Lettuce
Cantaloupe
Okra
Pears
Chile Peppers
Acorn Squash
Yellow Onions
Live Mexican Oregano Plant

Seriously, we ate so much junk at the beach, well it wasn't that bad but we certainly didn't eat anything fresh except bananas and the only organic stuff i could find, some mixed greens.

So I will probably just eat the Peaches, Cantaloupe & Pears fresh and happily for breakfast, or smoothie them in the Vita-mix

Okra - the usual roasted whole with salt & pepper - you just eat them like poppers, can't get enough.

The box recipe suggests BLTs with the Tomatoes & Lettuce, one of my fave sandwiches from pre veg days so the mere suggestion makes me crave - soooo, i will go to Wholefoods and get some Fakin Bacon Tempeh strips and make a TLT with vegannaise and a dash of tabasco for perfection!

i think i will make this Baked Stuffed Acorn Squash recipe - i love baked beans, especially the British Heinz ones which you can get in some Randall's and Wholefoods!

not sure what to do with the mexican oregano - i found this delish looking Smokey Chipotle-Balsamic Salad Dressing recipe i may try.  i'm not good at using fresh herbs! any suggestions welcome

I'm also not sure what to do with the peppers - the list said it could be Mexican Chiles, Hungarian Peppers, Bell peppers or Sweet Peppers so i'm actually not sure what they are. They look like chile peppers to me. Roast them?? Saute with onions and tempeh for tacos??

Local Box 7/12/12 - Marmite "Roasties"

before i list this weeks bounty - i must post my amazing butternut squash soup i made from the last box. Seems weird to have a butternut in the summer but they are so delish who cares.
From my new cookbook "Quick & Easy Low-Cal Vegan Comfort Food" by Alicia C. Simpson i made Chipotle Butternut Squash Bisque - the Chipotle made it addicting, just spicy enough. Very simple healthy recipe !

Ok on to this week!

Purple Hull Peas
Muzina Microgreens
Sweet Peppers
Okra
Green Onions
Cantaloupe
Oranges
Zucchini
Red Potatoes

Peas i will just cook and eat as a side or mixed with a grain.  OR i may buy another butternut and make another soup recipe from that cookbook, there is a Black Eyed Pea soup recipe that uses butternut puree and i'm sure the Purple Hull Peas would sub perfectly

Mizuna Microgreens - i love microgreens added to my salads. They are very nutrient dense

Okra - roasted as usual, i really cannot stray from this recipe - Roasted Okra

Green Onions - probably in a salad

Sweet Peppers - i think i will saute or stir fry with the Zucchini and some onion for a simple veg side dish

the Red Potatoes i have have HAVE to make this recipe with Marmite. I love marmite, this just sounds so amazing Marmite Roasted Potatoes

I will probably keep the skin on as that's how i like em - gotta love the British "roasties"

delicious beans

Making the fresh pinto beans was so easy and so good - just boiled them with water and garlic like THIS RECIPE minus the bacon dripings

I did make the the saute also, onions, cherry tomatoes, mushrooms and summer squash, with some fresh basil so simple and really good. I ate it actually in a tortilla with the beans. so good!


The sauteed turnip greens, amazing
The cantaloupe was the best i've ever had.

Tomato's & Squash for the Summer - Local Box 6/27/12

Hey, i've been remiss again! I missed a whole box so i will do a quick catch up and list this weeks box

Last box i got Okra which i discovered last year i love roasted eaten whole from this recipe - Roasted Okra
I also got this insane cucumber:


A summer squash that i roasted, some kale & collards which i honestly can't remember how i cooked, i think i sauteed them together and i do remember they were delicious.
How crazy that i can't remember what else i made!

I'm excited about the Pinto beans! I never make them from scratch i'm about to go have lunch with Christy Morgan who wrote Blissful Bites so i'm going to pick her brain on how best to cook them!

I did buy two new cookbooks this week tho so i want to use them.
Quick & Easy Low-Cal Vegan Comfort Foods by Alicia C. Simpson - has a recipe for Pinto Beans in Ancho Chili sauce, i want to try that and make nachos, yeah i have a nacho craving!

The other book i got is Wild About Greens by Nava Atlas - so I'm gonna start easy with her Simple Garlicky Greens recipe for the Turnip Greens

The box came with a recipe that i simply must make - Summer Squash Mushroom Skillet with Cherry Tomatoes- uses Onion & basil too.
