Local Box 1/23/14 - Vegan Greenling Meals

first of Kudos to Greenling and the deliver drivers from being out in the terrible freezing wet weather bringing us all our delicious boxes of goodness! Super Sweet!

Ok here's the goods:

Mesclun Salad Mix
Avocado
Arugula
Spinach
Tangerines
Meyer Lemons
Cauliflower
Dill
Watermelon Radish
Rainbow Carrots


So last week, you know i was in Marshall for the New Year New You festival, and one quote from one of my heroes,  Dr Michael Gregor, stuck out and stuck with me. It was that for breast cancer survivors, eating at least one cruciferous vegetable a day can greatly reduce the risk of recurrance.  I know i'm a healthy eater, but i don't conciously do this...so of course it's on my mind now and I was so happy to see FOUR cruciferous veggies in this box - Spinach, Arugula, Cauliflower & Radish! Awesome.

Salad Mix - salads! with the Avocado, and may mix Arugula in there as well.  I can make a dressing using the Lemons.

Spinach - probably just saute or steam or add to a soup

Arugula, Dill, Avocado, Lemon - i found the perfect recipe in Nava Atlas' cookbook Wild About Greens - Very Green Avocado Tahini Dip!

Cauliflower - i'm torn - the box came with an amazing sounding recipe for Roasted Cauliflower with Lemon and Dill - it just uses more oil than i usually use.  I also found a Curry Cauliflower soup in Colleen Patrick-Goudreu's  Color Me Vegan cookbook.

Carrots - I may roast or just steam and eat. A few will now doubt get in a salad

Watermelon Radish - Salads most likely, or this Sweet Pickled Onion Watermelon Radish Salad but while im in a roasting mood i found this Roasted Watermelon Radish recipe

Rad-icchio


So I was cleaning out my fridge this morning in anticipation of my new delivery box this eve, and I discovered I had totally forgotten the radicchio from last weeks box!  It looked like it was still good, but I knew I had to use it today, or lose it.  
The stove was still hot from making some sweet potatoes, so I decided I would just try roasting it with a little bit of olive oil and salt.  So I washed the leaves and spread them out on some parchment paper on a baking tray, drizzled the olive oil, and then put of the corner of my eye I spotted the salt cellar  and gourmet salt that I got for Christmas from my ex husband and his wife.  This particular salt is Ghost Pepper salt.  You know how I love things spicy!  So I used that, stuck it in the oven, waited maybe 15 minutes and then checked on my experiment

Not bad.  A little odd. But tasty, like delicate crispy flaky spicy things that dissolve in your mouth.

I want my baby bok baby bok baby bok

I have been a somewhat lazy cook! I baked the sweet potatoes and at them here and there.  I ended up feeding the pea shoots to Drizzle the guinea pig. He loved them. I still have the daikon.  Limes squeezed on whatever.  Oranges in smoothies!
I did however make the delicious Quinoa & Bok Choy Stir fry. It was really good, a perfect mix of flavors, super addicting



I went out of town this past weekend to Marshall, TX - to attend the New Year New You Health fest for my second time.  It's a plant based conference with renowned speakers, cooking demos by well known vegan chefs and work outs. The highlight was meeting Colleen Patrick-Goudreau who has authored three of my standby cook books and is an AMAZING speaker. I got really inspred while there and learned some new recipes as well as buying two new cookbooks!  The Health Promoting Cookbook by Dr. Alan Goldhamer who spoke at the event, and the new on by Chef Del Sroufe - Better Than Vegan, he was there doing a couple of cooking demo's and i love him!

Ok, new box this week! I hope to use my new recipes for it!

Local Box 1/9/14 - Vegan Greenling Meals

OMG do you all even remember me???? I haven't posted in so long, who knows why, busy, sick, my box day fell on thanksgiving AND Christmas so i didn't even get boxes for a few weeks, all of the above...

so I'm back, it's a new year, let's see what lovely new things i can make!
so today's box:

Pea Shoots
Treviso Raddicho
Bok Choy
Broccoli
Sweet Potato
Green Shallots
Marrs Oranges
Persian Limes
Daikon Radish
Live Rosemary Plant

Pea Shoots - i think in the past I have only made salads so I think I will try a cooked recipe.  Either this Soba with Pea Shoots, Shiitake Mushrooms, & Leeks because i have some amazing new special noodle bowls i got for Christmas - or easy pea-sy Pea Shoots Sauteed with Garlic & Ginger 

Treviso Raddichio - I found this rather tasty looking salad that uses Oranges too!  Raddichio & Orange Salad

Bok Choy - Quinoa & Bok Choy Stir Fry - this looks so good in the pictures! and i can use one of the limes for the juice

Sweet Potato - I tend to just bake these lately and keep them i the fridge for weekday meals

Limes - i want to make a salad dressing, maybe something from this Big List of No-oil Salad Dressings 


Daikon Radish - this Cold Soba Salad with Crisp Vegetables looks good, but there are a lot of them so i may try Roasting them
