just beet it

i'm in love with myself today because i made these Roasted Beet Tofu Burgers and the deliciousness cannot be beet. (it's impossible to not use beet puns)

like the recipe said, they are rather fragile, i added some whole what breadcrumbs and did manage to flip them half way through, very very carefully.  They maybe could be cooked longer.

I also did make the chipotle aioli - put some chipotles in adobo sauce in the blender with vegannaise and blended it up to a concotion akin to heaven.

red leaf lettuce, red onion, tomato and a smear of avocado on a whole wheat bun - perfection

Garlic, Mushrooms & Kale oh my

i love it when i find a recipe with 2 or more local box items in one, even better when it's 3!

I kind of made this one have 4 as i used scapes AND garlic from the box

this was super easy & tasty

i ate it with some pan fried tofu w/tamari

I had to put a picture of just the mushrooms & garlics cooking cos they are so delicious & juicy and amazing.

Scapes! greenling meal plan 4/21

well there were supposed to be radishes in the box but i didn't find any :(
but here is the rest of the list :

Red Beets
Garlic (a ton)
Spring Lettuce Mix
Red Leaf Lettuce

Lettuces will be salads, Strawberries will be in cereal, and smoothies and kids lunchboxes

I will get a 3 fer with Garlicky Mushrooms & Kale from Appetite for Reduction cookbook. perfect!
Also my son said that he only liked mushrooms on pizza and asked for that to be on the menu this week. Maybe sauted Escarole will be good on that!

But i also think this Escarole Soup recipe sounds yummy & easy and not to heavy for the hot weather.

Scapes are a part of the Garlic plant so i may use some of them in the garlicky kale recipe, there are lots of recipes online but nothing grabbed me. so i will just use them as garlic.

Beets! This bunch of beets are so beautiful and big. I have big plans :)

Can't be Beet Chocolate Cake - sounds crazy, but yum and i really won't tell my kids and see

The beet greens were good looking so i cut them off already and put them in a separate bag and will saute them in olive oil & garlic

Chard Pizza? so good

Do you ever make something so delicious you can't believe you made it yourself???

well this Carmelized Onion & Chard pizza is one of those things. (the picture sucks). Got the recipe from The Vegan Table by Colleen Patric-Goudreau

but the contrast of the sweet onions & salty olives & capers was amazing, even better on the Vicolo corneal crust (frozen from Wholefoods) - i put a little Parma - vegan parmesan, and it was divine. I even ate the leftovers in the car on the go the next day cold and it was incredible.

here is a salad i made with the lettuce, pea shoots, spring onions & radishes - so pretty

i did indeed make strawberry muffins! i basically followed a combo of recipes i found online, used wholewheat flour, and added apple cider vinegar to the soy milk  - yum

Collard Greens

The Pea Shoots are so pretty and i found out they are super healthy - there are a bunch of recipes HERE - they are not all Vegan - but i am feeling so hot lately and craving crisp cold stuff i think I will use them mostly in Salads with the two lettuces & the Radish. And in sandwiches, i'm really into baking tofu and using it in salads and sandwiches right now

The beets i'm gonna roast and just eat or I'm thinking toss with roasted little potatoes & vinigarette

Chard - Swiss Chard & Carmelized Onion from The Vegan Table by Colleen Patric-Goudreau - she suggests using this a pizza topping, i happen to have some frozen cornmal crusts so i'm going to do that!

Collards - BBQ Black Eyed Pea Collard Rolls from Veganomicon - this just sounds like a nice change of pace from the usual stuff i do. The BBQ sauce is made from scratch from the cook book too!

I've been making some yummy raspberry lime muffins from the cookbook recipe testing i'm doing, over & over for my son who is hooked, i may use the strawberries in a batch instead, but sometimes i hate using gorgeous sweet fresh strawberries in recipes & smoothies, i like them on cereal fresh and as snacks for kids.
