just beet it

i'm in love with myself today because i made these Roasted Beet Tofu Burgers and the deliciousness cannot be beet. (it's impossible to not use beet puns)

like the recipe said, they are rather fragile, i added some whole what breadcrumbs and did manage to flip them half way through, very very carefully.  They maybe could be cooked longer.

I also did make the chipotle aioli - put some chipotles in adobo sauce in the blender with vegannaise and blended it up to a concotion akin to heaven.

red leaf lettuce, red onion, tomato and a smear of avocado on a whole wheat bun - perfection
