A bit of this a bit of that


this was the winner of the week - Roasted Cauliflower and Nacho Cheeze dipping sauce!  I made the Cauliflower from This Recipe from Fat Free Vegan but I used a different cheeze sauce recipe - it's one I learned in Marshall from chef Miyoko who is the Vegan Cheese Whisperer. so so so so good


Here is the dip from Wild About Greens - it used Dill, Avocado, Lemon AND Arugula - perfect


Here's a salad with the Mesclun Mix, avocado and a salad dressing I made and used Lemon Juice in



This was a Lentil Soup I made from a mix of recipes and at the last minute I added a bunch of the Spinach all chopped up so it just wilted in the warmth. Perfect on the freezing night we were having!


Morning oatmeal using the tangerines - I cooked the oatmeal in some of the tangering juice, grated some zest on top and had a few segments on the side.


Another use of the Spinach - i just sauteeed some up with onions to make a taco with refried beans. Easy peasy!

Local Box 1/23/14 - Vegan Greenling Meals

first of Kudos to Greenling and the deliver drivers from being out in the terrible freezing wet weather bringing us all our delicious boxes of goodness! Super Sweet!

Ok here's the goods:

Mesclun Salad Mix
Avocado
Arugula
Spinach
Tangerines
Meyer Lemons
Cauliflower
Dill
Watermelon Radish
Rainbow Carrots


So last week, you know i was in Marshall for the New Year New You festival, and one quote from one of my heroes,  Dr Michael Gregor, stuck out and stuck with me. It was that for breast cancer survivors, eating at least one cruciferous vegetable a day can greatly reduce the risk of recurrance.  I know i'm a healthy eater, but i don't conciously do this...so of course it's on my mind now and I was so happy to see FOUR cruciferous veggies in this box - Spinach, Arugula, Cauliflower & Radish! Awesome.

Salad Mix - salads! with the Avocado, and may mix Arugula in there as well.  I can make a dressing using the Lemons.

Spinach - probably just saute or steam or add to a soup

Arugula, Dill, Avocado, Lemon - i found the perfect recipe in Nava Atlas' cookbook Wild About Greens - Very Green Avocado Tahini Dip!

Cauliflower - i'm torn - the box came with an amazing sounding recipe for Roasted Cauliflower with Lemon and Dill - it just uses more oil than i usually use.  I also found a Curry Cauliflower soup in Colleen Patrick-Goudreu's  Color Me Vegan cookbook.

Carrots - I may roast or just steam and eat. A few will now doubt get in a salad

Watermelon Radish - Salads most likely, or this Sweet Pickled Onion Watermelon Radish Salad but while im in a roasting mood i found this Roasted Watermelon Radish recipe

Rad-icchio


So I was cleaning out my fridge this morning in anticipation of my new delivery box this eve, and I discovered I had totally forgotten the radicchio from last weeks box!  It looked like it was still good, but I knew I had to use it today, or lose it.  
The stove was still hot from making some sweet potatoes, so I decided I would just try roasting it with a little bit of olive oil and salt.  So I washed the leaves and spread them out on some parchment paper on a baking tray, drizzled the olive oil, and then put of the corner of my eye I spotted the salt cellar  and gourmet salt that I got for Christmas from my ex husband and his wife.  This particular salt is Ghost Pepper salt.  You know how I love things spicy!  So I used that, stuck it in the oven, waited maybe 15 minutes and then checked on my experiment

Not bad.  A little odd. But tasty, like delicate crispy flaky spicy things that dissolve in your mouth.

Just Beet It

I wonder how many people have used that exact pun for a food blog post title....i may have even, i'm just too lazy to look thru them all...it just can't be helped.

But it seemed appropriate to give beets the title as one can make two different dishes from them, the actual beet bulb and the greens - I love that.

So without furthur ado, may i introduce, sauteed beet greens, just a bit of olive oil, garlic, beet greens, a tablespoon of Nutritional Yeast and a splash of white balsamic vinegar



So, last weekend, i did an amazing thing. I road tripped by myself to Marshall, in East Texas to attend the New Year New You Health Fest, a plant based eating conference held yearly there in an area of the country known as the "stroke belt".  I got to see some of my idols, Dr T Colin Campbell and Dr Michael Gregor, as well as acquire a slew of new idols, Julieanna Haver, Chef AJ, and Lindsay Nixon who wrote The Happy Herbivore cookbook series, and a few more... check the website to see all the amazing speakers

It's part of the Get Healthy Marshall initiative, started by the mayor and his wife, truly amazing. I learned so much, got re-inspired to eat and prepare whole foods, and I made a new friend in Elana, who i roomed with. A fun and inspirational girl who made us Banana/Almond milk ice cream IN OUR ROOM and cooked an entire vegan, oil free meal in the microwave for her and her triner and guys she drove with - brown rice, spinach, sweet potato, black beans. I learned a ton from her too!

Anyway, one great speaker i watched do a cooking demo was Kathryn Lorusso, also a breast cancer survivor and all round cool chick (check out her website VegOutCatering) - she made Orange Beet Salad over Greens in a pressure cooker, so I reproduced it at home sans pressure cooker. I roasted the beets, then made the dressing separately. OJ, cider vinegar, agave, dijon.  Very very tasty.


I used Grapefuit in a Citrus Kale Salad from Coleen Patrick-Goudreau's Color Me Vegan recipe - I added avocado to it to massage into the kale leaves, but this was a big success at a little party i brought it to


Here is the Pasta with Mizuno and Asparagus  (and Parsley)from Wild about Greens cookbook - I loved it to pieces. Added a splash of Balsamic Vinegar and it was perfect.


I used the Radishes in a couple of salads - one in this very amazing kale salad that I made for the road - admitedly it's not driving food, I had to sit in a parking lot to enjoy it, while listening to music and admiring east texas views

I really am inspired after attending the New Year New You Health Fest, and also as I have been listening to hours and hours of Colleen Patrick-Goudreau's Food for Thought Podcast. I cannot wait for the next box which i spied from the Greenling newsletter will have Collards and Chard.

Local Box 12/13/12 - Vegan Greenling meal plan

I love a box full of leafy greens! So full of health n stuff

here's what we got: (thi pic shows limes, i got grapefruit instead)

Tomatoes
Mustard Greens
Salad Mix
Swiss Chard
Cauliflower
Louisiana Shallots
Sweet Potatoes
Sunchokes
Grapefruit
Oranges

I'm so excited to have sunchokes! I swear in the whole time I have been getting the Local Box, they have been in the box on the weeks I don't get it.
I feel like i still need to learn more, but I kind of like the look of these basic Oven Roasted Sun Chokes - i found one with garlic and rosemary too



Cold weather + Cauilfower + Sweet potato = amazing soup

Curried Cauliflower & Sweet Potato Soup from Fat Free Vegan is difinitely being made

Ok the greens - I think I mentioned that I'm addicted to my Nutriblast shakes every morning and sometimes lunch too. I get in a rut with the greens, spinach or kale generally. So i will branch out this week with Chard and Mustard Greens.

However, I still, even though I have tried, not used my gorgeous cookbook Wild About Greens by Nava Atlas  - look at it, a gorgeous hardback book fool of deliciousness.


There some very tasty recipes using some combos of items from the local box, it's going to be hard to decide, especially as they overlap with my soup i'm so gung ho for above. The ones that caught my eye:

Chard with Brussel Sprouts & Red Peppers - can sub in mustard greens also. Sounds like a great holiday table recipe
Coconut Cauliflower Curry with Mustard Greens & Spinach
Curried Sweet Potatoes with Chard & Chickpeas
Citrus (Orange!) braised Mustard Greens with Apples &  Nuts
WOW how to pick!


I'm definitely going to make a salad with the Salad Greens and make Orange-Sesame Vinaigrette dressing from Appetite for Reduction by Isa Chandrea Moskowitz

I'm a fool for figs - greenling box 7/15

I was so darn excited for this box because i knew FIGS were gonna be in it - i'm a sucker for them. I am 43 years old and never ate a fig till my friend brought some over to me last summer when i was recovering from my mastectomy - she lovingly showed me how to wash them gently and store them and best of all eat them. I'm so addicted, they feel like a decadent gift

This week i also have to sing Greenling's customer service praises again. I also ordered the Engine 2 Recipe kit box this week, soooo excited for it - but when i opened the box it was not it. It was some randomm items, produce, staples & meat eeek.  I called emailed & tweeted, early this morning i got an email in response to my tweet. It was a simple switch up, someone else got my box. they figured it out and Grace called me and aranged a switch out. I'm thrilled

Ok list:

Nectarines
Blueberries
Basil
Blue Potatoes
Spicy Assorted Peppers
Purslane
Juliette Tomatoes (baby romas)
Eggplant (they are tiny and green - interesting)

Figs - they are almost all gone
Nectarines & blueberries - just eat and put in smoothies

I got a grill this week! so this is all about grilling (i think)

I really loved the pesto i made last box though so may use basil there again

Tomatoes - in my salads - but same as the basil, last boxes roasted cherry tomatos were so amazing i'm kinda still craving them

Peppers - not sure - some are jalapenos, i just love them in anything, one banana pepper and a serrano, could make a little pico de gallo with onions & serrano, and tomatoes

Potatoes - cut them up and put them in foil with onion and grill them

Purslane - just found this PURSLANE SALAD recipe - looks delish and i have cukes and a lemon, and can use a jalapeno!

Chard Pizza? so good

Do you ever make something so delicious you can't believe you made it yourself???

well this Carmelized Onion & Chard pizza is one of those things. (the picture sucks). Got the recipe from The Vegan Table by Colleen Patric-Goudreau



but the contrast of the sweet onions & salty olives & capers was amazing, even better on the Vicolo corneal crust (frozen from Wholefoods) - i put a little Parma - vegan parmesan, and it was divine. I even ate the leftovers in the car on the go the next day cold and it was incredible.

here is a salad i made with the lettuce, pea shoots, spring onions & radishes - so pretty

i did indeed make strawberry muffins! i basically followed a combo of recipes i found online, used wholewheat flour, and added apple cider vinegar to the soy milk  - yum

Spring Bounty!

So far this is what i have made

Spring Harvest Mexican Bowl - i'm sad i cannot share the recipe but it's top secret as i'm lucky enough to be recipe testing for this amazing lady who is writing a vegan cookbook - but i'm posting the pic as it does include Kale & Carrots & onions from the box, and the chimichurri sauce it's topped with is made with cilatntro which many people got in their box this past week (i got mint)

I did indeed make that Spicy Radish Sandwich - it was surprisinglys delish, i love sandwiches. I used WholeSoy soy yogurt instead, and i did not have Garam Masala so used curry powder instead. Yummy spicy sweet flavors. Weird & good :)  I think i will make this again. I used gluten free bread and my pic is open faced because i figured it would fall apart if i cut it.




I also did make that amazing looking Warm Potato & Dandelion Greens Salad and it was off the hook. Yeah i said that.  I really could have eaten the entire recipe by  myself in one sitting, perfect tang & bitter and creamy potato combo. easy too. I cut my potatoes up because they weren't that tiny & so there weren't many in 1/2 lb. Oh nd the coarse sea salt on top was the final deliciousness.




I've been using the carrots & avo in salads. giving drizzle lots of bits of greens and i attempted the roasted tomatoes and burned them, but let's not talk about that.

Greenling Box 3/24 - Dandelion Greens woah

Dandelion greens are a total newbie for me but they are known for their detoxifying and they have a ton of vitamin C & A & iron.
I also got some spearmint apprantly! The list says "herb" and it didn't smell totally minty to me so i took a pic and put the call out on twitter - two people said mint or maybe lemon balm but the folks at Greenling confirmed spearmint. - not sure what to do with it, tea maybe

here's the list:

Dandelion Greens

2 Avocados
Carrots
Radish
Spinach

The Carrots look amazing! really fat carrots with a ton of green tops that will make my guinea pig Drizzle extremely happy


Tomatoes i usually chop for salads or slice for sandwhiches, but the Greenling Box came with a quicky recipe for Roasted sliced Tomatos that sounds too good to not doo. just olive oil & vinegar, garlic, salt, peper & sugar (?) and roast till they begin to carmelize - ok yum

Dandelion Greens - This Warm New Potato & Dandelion Green Salad seems so perfect for the spring transtion from hot foods to cool salads, & i lurve new potatos

RADishes - i am excited to have these, they seem to always be in the box on the weeks i don't get delivery!
I'm really Torn between making a vegan version of this Spicy Radish Sandwich - or this Quinoa w/ROASTED Radishes - so we'll see what happens.  I love fancy sandwhiches - but anything roasted and anything quinoa are obviously gonna be winners

Spinach & Kale - i want to make this ridiculously good looking BLT SALAD from Vegan YumYum, it's not the same kind of kale but it should work. I'm still craving that Kale chickpea salad from last box so i may just make that again instead!

Avocados just don't last long, i eat them daily in salads & spread on toast.

Alright, gotta get cooking!

raw bok choy & apple salad & more

Like i said in my last post i was getting a little tired of cooking bok choy, and in light of the Crazy Sexy Diet cleanse i'm on i was thrilled to find this Bok Choy Apple Salad recipe

It is SO freakin good. Crisp, tangy, sweet, fresh, crunchy & easy :)



Also cooked my collards with the muli colored carrots in this super simple recipe [Collards & Carrots]- i just used Earth Balance instead of butter. I could have eaten a huge bowl of this as my entire meal but i shared it with a friend and ate it with a slice of toast spread with Grandma's Hummus - the best hummus in Austin!


Otherwise have been enjoying my green juices & fresh salads using Kale, mushrooms & carrots

Spring Cleansing - Greenling local box 3/10/11

so i'm on week 2 of the 21 day cleanse from Crazy Sexy Diet - feeling good, happy, energetic and still jonesing for coffee. 
It's convenient that this box is so full of greens!
So here's the list

Tomatoes
Bibb Lettuce
Spring Onions
Green Kale
Strawberries
Navel ORanges
Collards
Bok Choy
Multi Colored Carrots
Mushrooms

On this cleanse i am juicing and making green smoothies daily, so i know it's a bit boring but that's where a lot of the greens are going, kale juice & collard smoothies - delish
Even my 9 year old son likes Green Smoothies!



I've been really into kale & mushrooms lately, sauteing them  - so i think i will try this recipe for Braised Kale, Potato & Mushrooms

I also have a can of lovely chickpeas in the pantry so my do this recipe also or instead  - Roasted Chickpeas over Kale with Ceasar Dressing - roasted chickpeas are deeelish

This Collard & Carrot recipe will be perfect - minus the butter

Bok Choy - again! this time gonna try it raw - in this Bok Choy & Apple Salad

Lettuce in salads!
Oranges...just to eat
Tomatoes in salad and on top of Toast & Hummus, or in baked tofu sandwiches, with the lettuce & onions.

Mushrooms FTW and more...

I think one of the best things i made out of this box was this Creamy Mushroom Fetuccini with the Cremini Mushrooms:


And this divine Pizza that Also had some of the spinach & the leek! I sauted the mushroom & leek before putting it on. easy peasy


Here are two salads, the first one is a basic one where i used the avocado and the carrots, the second is spinach salad with strawberries & avocado!


Look at the purple carrot!


The strawberries were sooooo good.

I used some cilantro to make pico de gallo which i ate with one of the avocados & chips
Our guinea pig Drizzle loves cilantro so much that i keep giving bunches to him :)

Hmmm Sicilian Collards w/pine nuts & raisins from The Kind Diet! I paired it with marinated baked tofu. I think this is one of the best things i've made.

I decided to start a 21 day "adventure" cleanse as layed out in Kris Carr'sCrazy Sexy Diet book, on March 1st. As i'm already vegan i just have to eliminate coffee, sugar & gluten, and eat more raw veg & have green juice daily! So my next meals will be guided by those guidelines!
I still have stuff left to cook so another post will come!

Appetite for deliciousness...

it has taken me forever to use everything! Seems like this box had a TON - it's a good thing i get them every other week I still have the bok choy left (tho it NEEDS to be used tomorrow) and two portabello caps.

So i did roast the fennel - so easy, i ate it with brown rice, a dash of tamari & ume vinegar - simply delicious.

Salads were had with the bib lettuce & the micro greens. I also TWICE used the micro greens in place of lettuce in a vegan "smart bacon" BLT - So i called it a BMGT :). Fun.


Divine Sweet Potato Soup w/Coconut Milk & Quinoa - this was extremely delicious, love all the ingredients so much it couldn't help but be amazing. Quinoa and sweet potatos are such power foods. I ate this for three meals!


The rest of the recipes were from the Appetite for Reduction cookbook - Isa Chandra Moskowitz' new low fat vegan cookbook. Timely for me as i'm strill trying to lose some of the post chemo, post surgery recovery pounds. . Isa is my fave cook book writer - all her books rule.

Pineapple Collards - garlic, ginger, pineapple, red pepper flakes, nice & tangy - I'm a collard fan now. I served them with Blackened Broiled Tofu.


Sweet & Salty Maple Baby Carrots - the carrots that came in the box were pretty small so i figured they would work. This recipe was easy, just roasted, and it was good, a nice change.
The carrots RAW however were - i don't think i've ever eaten a more delish raw carrot. I put them in salads a couple o times.

Portabello Pepper Steak Stew - oh my gosh - this recipe is a definite keeper. Hearty & stewey, it has crushed fennel seeds & thyme which give it such a unique and tasty flavor, and the seitan plus portabello packs in protein. My meat eating weight lifting big guy friend ate two huge servings of this & has instructed me to make it again. A lot of chopping tho.

I don't think i made anything my kids liked, except salads. my son ate some of the mushroom stew, my daughter had a bit and didn't make a face. Oh an my son does love the sandwich. I will keep on though...

Vegan Greenling local box 2/10/11

This box has 2 items that i have shied away from cooking forever, fennel & collards! Interesting...

here's the full list:

I already used the Grapefruit & Tangerines - my son has been wanting to juice a lot lately and is into citrus, so we made grapefruit tangerine apple juice.
So my copy of the cookbook Appetite for Reduction by Isa Chandra Moskowitz arrived on the same day as the box! It's a sign! I'm going to try to make all this weeks food from that book. I'm excited.  Except for....

The Fennel - i'm just going to roast it simply like this recipe http://simplyrecipes.com/recipes/roasted_fennel/

And I have some quinoa i need to use so i'm very tempted by - Sweet Potato Soup w/Quinoa & Coconut Milk - i'm tempted by most sweet potato recipes so this may change!

Bok Choy - Curry Laksa - this is a big bowl of pad thai noodles & curry & tofu w/vegetables, it sounds amazing. If i feel lazy & quick then i will make the Ginger Bok Choy & Soba.

Collards - Pinapple Collards - sesame oil, garlic, ginger & finely chopped pinaple sounds good

Portabella Caps - Portabella Pepper Steak Stew - i happen to have some seitan in the fridge that i didn't know what to do with so this is it. It's got a few more ingredients than i'm used to but it sounds so good and i should get it in before it's not stew weather

Carrots - Sweet & Salty Maple Baby Carrots - simple and easy roasted in the oven

Great Greens! Greenling Local Box 1/27/11

Here are the contents of my Greenling box for 1/17/11 & my intended meal plan!

Mustard Greens
Broccoli – Texas Daily Harvest
Red Leaf Lettuce
A big ole bag of Arugula
Red Kale
Napa Cabbage
White Mushrooms – Acadian
3 Yellow Onions – Naegelin
A Grapefruit
3 Tangerines

so yeah, i'm scared of the mustard greens - just cos they are totally new an alien - but i found two possible recipes, just haven't decided yet.
The first one also happened to be one of the ones suggested by Greenling in the sheet that came with the box!
Balsamic-Glazed Chickpeas & Mustard Greens  - FatFree Vegan Kitchen is becoming one of my fave recipe sites! I love how she just invents such creative & nutritious yummy recipe.
But i'm also tempted by the ease of this Mustard Greens, Mushroom & Yellow Pepper recipe - it would use the box's mushrooms & i have a yellow bell pepper in the fridge. 
My main problem with side dishes like this though is that i don't usually have any main course planned, i'm kind of a one pot dish girl at this stage

It's still cold outside & i'm into soups & bread so I'm gonna make Rustic Red Kale & White Bean Soup

I also want to make vegan Cream of Broccoli Soup frm this months Veg News Magazine but don't be surprised i just end up stir frying it with something else!

I feel like cooking the arugula even tho normally i would use it raw in a salad, and i like to do at least one pasta recip a week in the hopes that the kids might like it, so i'm going to attempt Pistachio Arugula Pesto w/Penne & Sauteed Broccolini - it's a little fancy!

The Napa Cabbage! - so many options, i'm tempted to try some kind of wrap or roll, spring rolls.
Or a good old Stir Fry - Stir Fried Napa Cabbage - looks easy peasy

I'm going to use the Grapefruit for breakfast in Rip's Big Bowl my current obsession breakast!

First box fixins - Greenling

Here's my delights from the Greenling Local Box from week of 12/27

first of all here's a pic of the Soba Noodle Salad i mentioned in the last post, it was so good i made it twice! That used up all the Mizuna & some of the shallots (and yes that is a few pieces of avocado i threw in there last minute, heavenly)



And here is my New Years Day feast of Black Eyed Peas & Greens and veggie chili with Sweet Potato



I opted not to make the Borscht - I don't have a food processor and the matchsticking/chopping involved is too labor intensive for my post surgery upper body strength...

Sooo i used one beet to juice with some apples & carrots i had, and i roasted the rest and made this yummy Beet & Tomato salad using some of the parsley too (loosely based on a recipe from The Kind Diet)




I used cabbage, sweet potato, a few leaves of greens & onion and made Weight Watchers zero point soup, altho i suppose the sweet potato may make it 1 point soup! I didn't take a pic because altho delish, the cabbage turned it all purpley blue. This was easy, just saute onion, garlic, and whatever veg you have,I had carrots, the sweet potato, add veggie broth, and the leafy foods (greens & cabbage) and simmer

Then i DID attempt the recipe that came with the box - Penne with Greens Turkey & Olives
Of course i didn't use turkey, i used a can of cannelini beans instead and i just omitted the cheeses. This used up the rest of the amazing greens and shallots. It was REALLY good, i even shared it with my non vegan next door neighbor and she loved it. The kids however, another story, the anti-olive brigade. hmmmph. they each ate one penne, ONE




I still have parsley, 2 sweet potatoes, an onion & half a cabbage left.
my friend suggested making chimichurri sauace with the parsley so i will!
I'm going to make Spicy Sweet Potato peanut soup - OMG
And i think i'm cabbage stumped. I love coleslaw...but need to make one without carrots because i don't have any, and i don't want to chop.

Seems i may squeeze one more post out of this box

My first Greenling Box!

I am so excited to be signed up with Greenling organic delivery. www.greenling.com
I definitely get in a rut with my produce & buy the same old stuff every time. Also, it's hard for me to get to the store all the time as a single parent. Greenling is not expensive and there is not a commitment, AND i could get every two week delivery, even better for my budget. I decided to sign up for the Local Box, but you can change your order or add to it anytime(by the designated deadline).
I do still fear thought that I won't use it all up, and i know i need help with cooking ideas. Greenling offers recipes with each box, and there is a Greenling blog with meal plans & recipes, but nothing vegan. Soooooooooooo, here i go. I'm gonna blog about what i cook or intend to cook.
I'm torn between doing the posts when i get the box and just listing what i intend to make, and posting afterwards with what i made and how it was. we'll see - maybe both.

Here's what was in this weeks box:
Avocados
Mizuna
Red Leaf Lettuce
Red Beets
Sweet Potatoes
Cabbage
Onions
Mixed Superfood Greens
Parsley
Green Shallots

So far i used half an avocado with some beans & tortillas from Gueros, and had a basic salad with the Lettuce, i threw in a bit of the Mizuna for kicks. Mizuna is a japanese green.

Tonight i made Soba Noodle Salad With Mizuna - I used the Green Shallots in place of the scallions. Delish

I plan to use the greens tomorrow in black eyed peas & greens, and some sweet potato in veg chili w/sweet potato.

I am going to use beets & some cabbage in Vegetarian Borscht

I have no idea what to do with the parsley

The box came with a recipe for Penne w/Goat Cheese, Olives & Turkey - i think i will make it, and sub cannelini beans for the turkey & just omit the goat cheese. Someone suggested raw macadamia nut chz to replace but i am tooooo lazzzyyy

Will most likely use any leftover cabbage & greens & sweet potatos in a version of the Weight Watchers zero point soup.

Avocado is always used in my house, i generally put it in salads or spread it on toast.
oh yeah the onions, they'll go in the WW soup too, and the chile

Already with the soba noodle mizuno recipe i stepped out of my box, i think this is going to really good for cooking inspiration!
