lazy box

I just wasn't in the mood much to cook this past week, not sure why! So this is a lunch i had with the Mustard Greens, a kind of whipped of version of nice ass greens - green onion, sauteed greens, a bit of vineagar and a bit of nutritional yeast. i ate them with toast & hummus


I did make the delicious Ye'abesha Gomen (Stewed & Sauteed Collards) from Appetite for Reduction cookbook, and i added kidney beans for added protein and goodness.


I also just made this Autumn Vegetable Puree with sweet potato, carrot & turnip - i didn't puree them though, was lazy and just mashed. it was a success! Even the boy child ate it. 




I still have a couple of turnips left...hmmm

Turnip up! local box January 26th

Somehow the whole time i've been getting the local box i've managed to not ever get Turnips! Either they have been in the box the week i don't get the box, or sometimes items are listed as "this or this", like this week on the list of local box contents it says "golden globe turnip" or "black radish" - depends on what comes in on the day of your delivery i guess.  So yay, a new thing to try that i've never made!

Mustard Greens - i don't love them to pieces so will rely on good old Nice Ass Greens recipe again as this makes anything taste good.

Avocados - i always have these around for salads, spread on toast and today i actually put half of one in a smoothie. There was a recipe in the box for baked sweet potato with Avocado Dill Topping that sounds good and easy and i can use veganaise or vegan sour cream in place of regular.

Broccoli - well the kids love it just plaine steamed but i found a recipe in Appetite for Reduction for Orange Scented Broccoli wich would use the oranges too! yeah.

Collard Greens - there's a recipe in Appetite for Reduction i've always wanted to try - Ye'abesha Gomen (Stewed & Sauteed Collards) - it cooks the greens for a long time which is not usual in vegan cooking but the combo of ginger & garlic, onion & red pepper flakes sound so tasty

Green onion - salads, tofu scrambles ect..

Oranges - maybe in the aforementioned broccoli,
Grapefruit - i already ate one for breakfast, it was so good!

Dill - as well as that avocado dill topping i found a Creamy Dill Sauce in the Skinny Bitch Ultimate Every Day Cookbook. I am determined to use this cookbook this week as i never have! i'm a cookbook hoarder.

sooo - From the Skinny Bitch cookbook i found Seitan Sweet Potato & Onion Hash that looks amazing AND Black Bean & Yam Tacos that i have to make, will use an avocado with those too

Turnips - i had kind of a hard time finding a turnip recipe that appealed to me but LOOK! This one has a sweet potato in it AND Dill - Score! Mashed Sweet Potatoes & Turnips

Eggplant Bacon - yeah you heard me

The Ceasar Salad with eggplant bacon was a total success - i can't print the recipe cos it's from a cookbook (Appetite for Reduction by Isa Chandra Moskowitz) but basically slices of eggplant were baked with flavorings to make it bacony like soy sauce & liquid smoke, then a dressing called Ceasar Chavez Dressing was made using amazing things like cashews & miso & lemon juice. De-effin-licious


I made the Spaghetti Squash  using the recipe that came with the Greenling Local Box - roasted with olive oil salt & pepper. Then sauted shallot (had some STILL leftover from a box a couple of weeks ago) & garlic & red pepper flakes. When the squash is ready, fork scrape it into the spaghetti, add to pan with onion & garlic and toss, serve with fresh basil & vegan parmesan - i also added some shredded follow your heart vegan mozzerella. Ummmmm i ate the whole squash... that should give a hint into how it was :)

I didn't make the okra & greens recipe mentioned in the last post - the sweet potato greens kinda looked like they needed to be used fast so i sauteed them up with some garlic and used them in these black bean tacos. I also sliced up one of the peppers, they were pale yellow and therefore very mild, so they added a delicious fresh crunch to the tacos!


The okra i roasted again, it really is just too delicious and easy.

Curry Laksa

My final dish from that last box! Using the beautiful bok choy - this is i think a Malaysian Dish veganized in Appetite for Reduction, pad thai nodles, tofu, bok choy, red bell, coconut milk & red curry broth, lime & cilantro to garnish! I was kind of proud

Appetite for deliciousness...

it has taken me forever to use everything! Seems like this box had a TON - it's a good thing i get them every other week I still have the bok choy left (tho it NEEDS to be used tomorrow) and two portabello caps.

So i did roast the fennel - so easy, i ate it with brown rice, a dash of tamari & ume vinegar - simply delicious.

Salads were had with the bib lettuce & the micro greens. I also TWICE used the micro greens in place of lettuce in a vegan "smart bacon" BLT - So i called it a BMGT :). Fun.


Divine Sweet Potato Soup w/Coconut Milk & Quinoa - this was extremely delicious, love all the ingredients so much it couldn't help but be amazing. Quinoa and sweet potatos are such power foods. I ate this for three meals!


The rest of the recipes were from the Appetite for Reduction cookbook - Isa Chandra Moskowitz' new low fat vegan cookbook. Timely for me as i'm strill trying to lose some of the post chemo, post surgery recovery pounds. . Isa is my fave cook book writer - all her books rule.

Pineapple Collards - garlic, ginger, pineapple, red pepper flakes, nice & tangy - I'm a collard fan now. I served them with Blackened Broiled Tofu.


Sweet & Salty Maple Baby Carrots - the carrots that came in the box were pretty small so i figured they would work. This recipe was easy, just roasted, and it was good, a nice change.
The carrots RAW however were - i don't think i've ever eaten a more delish raw carrot. I put them in salads a couple o times.

Portabello Pepper Steak Stew - oh my gosh - this recipe is a definite keeper. Hearty & stewey, it has crushed fennel seeds & thyme which give it such a unique and tasty flavor, and the seitan plus portabello packs in protein. My meat eating weight lifting big guy friend ate two huge servings of this & has instructed me to make it again. A lot of chopping tho.

I don't think i made anything my kids liked, except salads. my son ate some of the mushroom stew, my daughter had a bit and didn't make a face. Oh an my son does love the sandwich. I will keep on though...
